Chicken-Couscous Bake with Capers and Tomatoes

- 1/4 tsp black pepper, freshly ground
- 1/8 tsp table salt
- 1 1/2 cup(s) canned chicken broth, with lemon and herbs
- 2 Tbsp capers, drained and chopped
- 1 cup(s) uncooked couscous
- 1 cup(s) cherry tomato(es)
Pumpkin Bars

Mix moist ingredients first then add the dry
- Icing:
- 4 eggs
- 1 cup vegetable oil
- 2 cups granulated sugar
- 1 lb can pumpkin
- 2 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ginger
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 3-ounce package cream cheese, softened
- 1 tablespoon milk
- 6 tablespoons butter
- 1 3/4 cups sifted confectioners' sugar
- 1 teaspoon vanilla extract
Poppy Seed Cake

Beat eggs and oil 1st. Then add sugar, milk, flour, salt baking powder, poppy seeds and flavoring
- 3 eggs
- 1 1/8 cup oil
- 2 1/4 cup sugar
- 1 1/2 cup milk
- 3 cup flour
- 1 1/2 t salt
- 1 1/2 t baking powder
- 1 1/2 t butter flavoring
- 1 1/2 t almond flavoring
- 1 1/2 t vanilla flavoring
- 1 1/2 T poppy seeds
beef tips on rice

Combine beef, salt, pepper and thyme; mix well
- 20 pounds beef stew meat, cut into 1-inch cubes
- 2 tablespoons salt
- 5 teaspoons pepper
- 5 teaspoons dried thyme
- 15 (10 3/4 ounce) cans condensed cream
- of mushroom soup, undiluted
- 4 cups water
- 4 cups chopped onion
- 2/3 cup chopped fresh parsley
- 2 1/2 teaspoons browning sauce (optional)
- 6 1/2 to 7 pounds long grain rice, cooked
Au Gratin Potatoes and Ham

Cook potatoes until tender; cool
- 20 pounds red potatoes
- 8 pounds fully cooked ham, cubed
- 4 (10 3/4 ounce) cans condensed cream of celery soup, undiluted
- 2 quarts milk
- 1/2 cup all-purpose flour
- 6 pounds process American cheese, cubed
- 2 teaspoons pepper
- 2 teaspoons paprika
Beef Lentil Soup

In a large stockpot, cook beef over medium heat until no longer pink; drain
- 1 pound ground beef (90% lean)
- 1 can (46 ounces) tomato or V8 juice
- 4 cups water
- 1 cup dried lentils, rinsed
- 2 cups chopped cabbage
- 1 cup sliced carrots
- 1 cup sliced celery
- 1 cup chopped onion
- 1/2 cup diced green pepper
- 1/2 teaspoon pepper
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1 teaspoon salt, optional
- 2 beef bouillon cubes, optional
- 1 package (10 ounces) frozen chopped spinach, thawed
Zucchini Casserole

For the 1st layer cook hamburger, salt, pepper, and garlic, drain and spoon in a 2 qt dish
- 1 lb hamburger
- 1 tsp salt
- 1/4 tsp pepper
- 1 clove garlic mashed
- 2 1/2 - 3 lbs zucchini
- 1 can 4 oz chopped chilies
- 2 tblsp butter
- 1 cup shredded cheddar cheese
- 2 eggs
- 2 cup cottage cheese
- 2 tsp parsley
- 2 tblsp parmesan cheese

- 8 to 10 cups cubed seeded peeled zucchini (4 to 5 pounds)
