Spanish Rice - Serves 48

Saute rice, onions and green pepper inoil until golden brown
- 2 1/2 lbs uncooked rice (1 1/2 qts)
- 2 tbsp chopped onions (dry)
- 1 lb diced green pepper
- 1 cup vegetable oil
- 1 can diced tomatoes (#10)
- 4 oz bacon bits
- 2 tbsp salt
- 2 1/3 tbsp sugar
- 1/2 tsp pepper
- 2 tsp chili powder
- 2 cans beef broth - good with vegetable broth
Chicken Teriyaki with Broccoli

Coat a large nonstick skillet with cooking spray and set pan over medium-high heat
- 1 spray(s) cooking spray
- 2 clove(s) (medium) garlic clove(s), minced
- 1 pound(s) uncooked boneless, skinless chicken breast, cut into 1-inch cubes
- 4 medium scallion(s), chopped (green and white parts)
- 1/2 cup(s) fat-free chicken broth
- 2 Tbsp teriyaki sauce
- 2 cup(s) cooked brown rice, regular or instant, kept hot
- 4 cup(s) broccoli, fresh, florets, steamed*
Greek Eggplant and Chicken Casserole

Preheat oven to 350ºF. Coat a 9 X 13-inch baking pan with cooking spray
- 3 spray(s) olive oil cooking spray
- 2 medium raw eggplant, peeled and cut lengthwise into 1/4-inch-thick slices
- 3/4 tsp table salt
- 1 pound(s) uncooked extra lean ground chicken breast
- 1 cup(s) onion(s), sliced
- 2 clove(s) (medium) garlic clove(s), minced
- 2 Tbsp parsley, fresh, chopped
- 1/3 tsp dried parsley
- 1/3 tsp chives, dried
- 1/3 tsp dried tarragon
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp table salt
- 1/2 tsp black pepper, freshly ground
- 28 oz canned diced tomatoes
- 2 Tbsp canned tomato paste
- 6 oz SoyaKaas Grated Parmesan Style Soy Cheese, (about 3/4 cup)
Mrs. Field's Chocolate Chip Cookies

Cream margarine, sugar, brown sugar
- 2 cup butter
- 2 cup sugar
- 2 cup brown sugar
- 24 oz bag chocolate chips
- 8 oz hersey bar
- 3 cups chopped nuts
- 4 eggs (egg beaters)
- 2 tsp. real vanilla extract
- 4 cups all-purpose flour
- 5 cups oatmeal (blended into a fine powder)
- 1 tsp. salt
- 2 tsp. baking powder
- 2 tsp. baking soda
Clam Chowder

Drain clams, reserving liquid; set the clams aside
- 2 cans (6-1/2 ounces each) minced clams
- 6 medium potatoes, peeled and diced
- 6 medium carrots, diced
- 1/2 cup chopped onion
- 1/2 cup butter, cubed
- 1-1/2 cups water
- 2 cans (12 ounces each) evaporated milk
- 2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
- 1 teaspoon salt
- 1/2 teaspoon pepper
Basic White Bread

Mix 3 1/2 cups of flour with sugar, salt, shortening and yeast in a large mixing bowl
- 6 to 7 cups all-purpose flour
- 3 tablespoons sugar
- 1 tablespoon salt
- 2 tablespoons shortening
- 2 packages quick acting or active dry yeast
- 2 1/4 cups scalded milk cooled to about 120°
Meatballs

- 1 egg
- 1 tblsp parsley

- 1 12 oz chili sauce

- 1/2 C taco sauce
- Lettuce
- 1 tomatoe
- 2 C gratted cheese
- 1 pkg taco flavor chips crumbled
- Olives
- Kidney beams
- 1 lb ground beef
Garlic Shrimp and Pea Salad

Boil noodles until tender, 3-4 mins, do not overcook
- Salad:
- 1 pkg (10 oz) pkg frozen peas, thawed
- 1/2 lb medium (fresh or frozen) raw shrimp, shelled and deveined
- 4 oz fresh mushrooms, sliced
- 4 oz China Boy Lo mein noodles (break in half)
- Dressing:
- 2 large cloves garlic, minced
- 6 tbls teriyaki sauce
- 2 tbls sesame oil
- 1/4 cup red wine vinegar
