Roasted Green Beans with Balsamic-Browned Butter

Made these tonight for the missionaries
- 1 – 1 1/4 pounds fresh green beans, rinsed, trimmed and dried
- canola or olive oil cooking spray
- 1/8 teaspoon kosher salt
- a pinch (about 1/16 teaspoon) black pepper
- 2 tablespoons sliced almonds
- 1 1/2 tablespoons butter
- 1 1/2 teaspoons reduced-sodium soy sauce
- 3/4 teaspoon balsamic vinegar
Green Goddess Pasta Salad

1. Cook pasta as package label directs; add asparagus and peas during last 2 minutes
- 12 ouncesspinach-and-cheese mini ravioli or tortellini
- 1 poundasparagus, trimmed and cut into 2-inch pieces
- 1 poundfrozen peas, thawed
- 3 tablespoonssliced almonds
- 6 cupschopped upland cress, watercress or baby arugula
- 1 tablespoonextra-virgin olive oil
- 1/2 teaspooncoarse salt
- 1/2 teaspoonfreshly ground black pepper
- 1/4 cupParmesan cheese shavings
Golden Austrian Cauliflower Cream Soup

Place all the ingredients except the cashews & kale in a pot
- 1 head cauliflower, cut into pieces
- 3 carrots, coarsely chopped
- 1 C coarsely chopped celery
- 2 leeks, coarsely chopped
- 2 cloves garlic, minced
- 2 T Dr. Fuhrman's VegiZest or other no-salt seasoning (I used Spike)
- 2 C carrot juice (I used bottled carrot juice)
- 4 C water
- 1/2 t. nutmeg
- 1 C raw cashews ( I used roasted w/o salt)
- 5 C chopped kale leaves or baby spinach (I used kale)

Cilantro Lime Vinaigrette (Cafe Rio Copycat)

- 1/2 C. seasoned rice vinegar or white wine vinegar (author prefers rice vinegar)
- 4 cloves garlic minced
- 1/2 t. Kosher salt or sea salt
- 4 t. sugar
- 1/4 C oil
- heaping 1/2C chopped cilantro (author uses about 1/2 bunch)
- Jalapeno seeded and chopped (totally optional; doesn't really make it spicy, it just adds that peppery flavor)

- 4 medium zucchini
- 1 tsp butter
- 1/2 small onion, finely diced
- 1 shallot, minced
- 3 cloves garlic, crushed
- 2 tbsp white wine
- 1.3 lb (20.8 oz) ground turkey (99% fat free)
- 1 large egg white
- 1/4 cup grated parmesan cheese
- 1 cup fat free chicken broth
- 2 tbsp seasoned breadcrumbs
- 1 tsp paprika
- 1 tsp fresh chopped rosemary
- 1 tsp garlic powder
- 1 tsp marjoram
- 1 tsp dried basil
- Salt and fresh pepper
Spiced Chocolate Chip Peanut Butter Oatmeal Cookies

- 1/2 C butter, softened
- 1/2 C peanut butter
- 1 C granulated sugar
- 1/2 C packed brown sugar
- 1 t. B.P.
- 1/2 t. B.S.
- Dash ground cinnamon
- Dash ground nutmeg
- Dash ground allspice
- 2 eggs
- 1 t. vanilla
- 1 1/4 C all-purpose flour
- 2 1/2 - 3 C rolled oats
- 1 C semisweet chocolate chips.
