Lamb Chops with Parsley Pistachio Pesto

To make the pesto: in a food processor, combine the parsley leaves, garlic and pistachios; pulse to combine
- Pesto:
- 2 cups fresh Italian (flat-leaf) parsley leaves
- 1 clove garlic, peeled
- 1/3 cup shelled pistachios
- 1/3 cup olive oil
- 4 Tbl. shredded Parmesan cheese
- Water as needed
- Salt and pepper
- For the Lamb:
- 8 lamb loin chops, about 1 to 1 1/2 inches thick
- salt and black pepper to taste (or favorite all-purpose seasoning)
- 1 Tbl. olive oil
Crunchy, Ritz Chicken

Process Ritz crackers in food processor until you have fine crumbs
- 4 lg. boneless, skinless chicken breast, cut in thirds
- 1 1/2 bag of reduced-fat Ritz crackers
- 2 tsp. garlic powder
- 2 eggs, beaten
- cooking spray
Cherry and Pomegranate Sherbert

- 3 cups fresh or frozen cherries, pitted
- 1 cup sugar
- 1/2 cup pomegranate juice
- 1 1/2 cup whole milk
- 1 Tbl. heavy cream
- Juice of 1 lemon

- 2 cups beer

- 5 sprigs thyme
- 3 lbs boneless pork butt (fat cap intact), cut into 2-inch chunks
- 5 cloves garlic
- 2 bay leaves
- 1/2 cup vegetable oil
- Juice of 2 limes
- Juice of 1 orange
- Kosher salt
- Corn tortillas, warmed, and assorted toppings, for servings
- Combine 1 thinly sliced red onion, 1 cup cider vinegar, 1/2 cup water, 2 Tbl sugar, 2 bay leaves, 1 tsp each coriander seeds, mustard seeds, and cumin seeds, 1/2 tsp. dried oregano and 1/4 tsp. kosher salt in a small saucepan. Boil 2 minutes; let cool.
