Crock-Pot Mongolian Beef***

Coat the beef flank steak in starch
- 1 1/2 lbs beef flank steak, cut into strips
- 2 Tbsp olive oil
- 1/2 Tsp minced ginger
- 2 Cloves garlic, minced
- 3/4 cup soy sauce
- 3/4 cup water
- 3/4 cup brown sugar
- 1/4 cup cornstarch
- 1/2 cup shredded carrots
- 3 med green onions, chopped
Taco Casserole

Saute hamburger until lightly browned, drain
- 1 lb. hamburger
- 1 (8oz.) pkg. mild cheese, grated
- 2 cans cream of chicken soup
- 1 - 12 oz. pkg. Nacho Flavor Doritos
- 1 can Rotel tomatoes and green chilies
Confetti Macaroni Salad

Make dressing: In a bowl, whisk together vinegar, buttermilk, lemon juice, oil, garlic, mustard, parsley and dill
- 1 Tbl. cider vinegar
- 1 cup buttermilk
- 1 Tbl. lemon juice
- 2 Tbl. olive oil
- 1 clove garlic, minced
- 1 Tbl. Dijon mustard
- 1 Tbl. chopped fresh parsley
- 1 Tbl. chopped fresh dill
- salt and pepper
- 1 lb. box elbow macaroni
- 1/2 small red bell pepper, seeded, cut into 1/4 inch dice
- 1/2 small green bell pepper, seeded, cut into 1/4 inch dice
- 1/2 small sweet onion, cut into 1/4 inch dice
- 2 ribs celery, finely chopped
- 1/2 English cucumber, cut into 1/4 inch dice
- 1 small yellow squash cut into 1/4 inch dice
- 1/2 cup finely chopped radish
Basic Brine

- 3/4 cup kosher salt

Thai Chicken Drumsticks w/ cucumbers

In a food processor, puree the cilantro stems, garlic, oyster sauce, half of the lime juice and 1/2 tsp
- 1/2 bunch cilantro, stems and leaves separated and coarsely chopped
- 3 cloves garlic
- 2 Tbl. oyster sauce
- 1 lime, juiced
- Salt and pepper
- 8 chicken drumsticks (2 lbs.)
- 1 1/2 cups jasmine rice
- 2 cucumbers - peeled, halved lengthwise and thinly sliced crosswise
Hard Rock Candy

Roll the edges of 2 - 16" square pieces of heavy duty alum
- 1 cup confectioner's sugar
- 3 3/4 cup white sugar
- 1 1/2 cup light corn syrup
- 1 cup water
- 2 tsp. cinnamon oil
- 1 tsp. red food coloring
Watermelon Salsa***

Stir together the lime zest, lime juice, sugar and 3/4 tsp
- 1 1/2 tsp. lime zest (from about 1 lime)
- 1/4 cup fresh lime juice (from about 3 limes)
- 1 Tbl. sugar
- Freshly ground pepper
- 3 cups seeded and finely chopped watermelon
- 1 cucumber, peeled, seeded and diced
- 1 mango, peeled and diced
- 1 jalapeno pepper, seeded and minced
- 1 small red onion, finely chopped
- 8 fresh basil leaves finely chopped
- 1/2 tsp. garlic salt
- Tortilla or pita chips, for serving
Slow Cooker Beef and Barley

Combine the beef, barley, celery, carrots, leeks, thyme, beef broth and soy sauce in a slow cooker
- 1 3/4 lbs. boneless beef chuck (in one piece)
- 1 cup pearl barley
- 4 stalks celery, quartered
- 6 medium carrots, quartered
- 2 medium leeks, sliced (white and light green parts only)
- 1 sprig thyme
- 4 cups low-sodium beef broth
- 1 Tbl. soy sauce
- Kosher salt and freshly ground pepper
Grape Salad**

Wash and dry grapes. In a large bowl, mix together the cream cheese, yogurt, sugar and vanilla
- Toppings:
- 2 lbs green grapes
- 2 lbs red grapes
- 1 8oz. package 1/3 less fat cream cheese
- 1 8oz. container plain greek yogurt
- 1/2 cup white sugar
- 1 tsp. vanilla extract
- 4 oz. chopped pecans
- 2 Tbl. brown sugar
Thai Chicken with Minted Rice

In a medium saucepan, cook the rice according to package directions
- 1 cup jasmine rice
- 2 Tbl. olive oil
- 1 1/2 lb. skinless boneless chicken thighs, cut into 1-inch chunks
- salt and pepper
- 2 carrots, sliced crosswise
- 1 large red bell pepper, chopped
- 5 Tbl. pesto
- 1 can (13.5 oz) light coconut milk
- 1 cup fresh mint leaves, chopped
- 1 lime, cut into 8 wedges
