Preheat oven to 300 degrees
- 1 cup flour
- 3 large eggs, lightly beaten
- 1 1/2 cups plain breadcrumbs
- 2 organic lemons, 1 zested and 1 cut into wedges
- 1/2 cup chopped flat-leaf parsley
- 2 Tbl. chopped fresh thyme
- 2 cloves garlic
- 1/2 cup grated parmigiano-reggiano cheese
- 1 1/2 lbs. chicken, pounded 1/8 inch thick
- salt and pepper
- EVOO, for frying
- 3 ripe heirloom tomatoes, diced
- 1 ear corn, kernels scraped from the cob
- 1/2 small red onion, finely chopped
- 1/2 cup basil leaves, torn or shredded, or 1/4 cup tarragon leaves, chopped
TriColor Salad Pizzas

Preheat oven to 475 degrees
- Cooking spray
- 1 oz. parmesan cheese (1/2 cup grated)
- 2 oz. part-skim mozzarella cheese
- 3/4 lb. store-bought whole-wheat pizza dough, at room temperature
- 1 Tbl. cornmeal
- 3 Tbl. olive oil
- 1 cup part-skim ricotta cheese
- Freshly ground pepper
- 1 small head radicchio
- 2 heads endive
- 1 cup grape tomatoes
- 4 cups baby arugula
- 1 Tbl. balsamic vinegar
Sweet Onion Potatoes Au Gratin

Heat butter in a skillet over medium heat
- 2 Tbl. Butter
- 1 large or 2 medium sweet onions, such as Vidalia, thinly sliced
- salt and pepper
- 1/2 tsp. ground thyme or dried if ground isn't available
- 1 baly leaf, fresh or dried
- 2 lb. baby Yukon Gold potatoes or fingerling potatoes
- 1/2 to 2/3 cup cream
- 1/2 cup grated Parmigiano-Reggiano cheese
- 1/2 lb. grated Gruyere or other Swiss cheese
Grilled Pork Tenderloin with Watermelon-Arugula Salad

Heat the grill to medium. Heat the oven to 400 degrees
- 4 oz. feta cheese, crumbled, divided
- 1 Tbl. lemon juice
- 1/3 cup buttermilk
- 1 Tbl. olive oil
- Ground black pepper
- Two 6-inch whole-wheat pita pockets
- Olive oil cooking spray
- Kosher Salt
- 1-lb. pork tenderloin, trimmed
- 3 cups arugula
- 1/2 cup thinly sliced red onion
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves

- 2 ears corn, shucked
- 5 Tbl. unsalted butter
- 3 cups grape tomatoes
- 2 cloves garlic, minced
- Freshly ground pepper
- 1/2 cup white wine
- 12 ounces pappardelle pasta
- 1/2 cup low-sodium chicken broth
- 1 small bunch scallions, thinly sliced
- 1/2 cup freshly grated Parmesan, plus more for topping
- Torn basil, for topping
