Lime-Berry Mousse Trifle

1. Slice two limes using Ultimate Mandoline fitted with v-shaped blade; set aside
- 4-5 limes
- 6 ounces creamcheese, softened
- 2/3 cup sweetened condensed milk
- 1 container (12 ounces) frozen whipped topping, thawed, divided
- 3 CliPS assorted fresh berries, such as strawberries , raspberries and blackberries
- 1 frozen prepared pound cake (16 ounces). thawed
- 1 pint lime sherbet. softened
- 1/4 cup sliced almonds, toasted
- Additional berries for garnish (optional)

- 2 Cups canned tomato sauce
- 1 Cup red wine
- 2/3 Cup firmly packed light brown sugar
- 2 cloves garlic chopped
- Juice of 1 lemon
- 3 teaspoons salt

Step 1 Preheat grill to medium-high heat
- Salad:
- 2 pounds small red potatoes
- 3/4 pound yellow squash, cut lengthwise into 1/2-inch slices

- 3 oz rum
- 2 C Vanilla instant pudding, prepared to package directions.

Haricots Verts with Almonds, Ricotta Salata and Orange-Honey Dressing

Bring a large pot of salted water to a boil over high heat
- 1 pound haricots verts (French green beans), trimmed
- Kosher salt and freshly ground black pepper
- 2 tablespoons orange juice plus 1 teaspoon zest

Heat oven to 350°F. In a large bowl, combine all the meatloaf ingredients and knead the mixture with your hands...
- For the meatloaf:
- 1 1/2 pounds ground beef
- 2 cage-free eggs
- 1 small onion diced
- 2 garlic cloves minced
- 2 cups mushrooms finely chopped
- 1 teaspoon coconut aminos (or low sodium soy sauce)
- 1 tablespoon tomato paste
- 1/4 cup unsweetened almond milk
- 1/4 cup almond flour
- 1 tablespoon dried oregano
- 1 teaspoon Himalayan pink salt (or Kosher salt)
- 1 teaspoon ground black pepper
- For the tomato sauce:
- 1 cup tomatoes diced
- 1/2 teaspoon Himalayan pink salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1 heirloom tomato sliced, (optional)
Beef Stroganoff

Dempster Family Recipe as modified by my parents from The Gourmet Cookbook Vol
- 2 Lb Beef Filet sliced into strips (if raw, sprinkle liberally with salt and pepper, toss and allow to rest for 2 hours in the refrigerator). If cooked already allow to come to room temperature.
- 1 yellow onion small dice
- 1 Lb baby bella mushrooms sliced
- 4 T EVOO
- 14 T butter
- 2 T flour
- 2 C beef stock
- 3/4 small can of tomato paste
- 3 T sour cream
- S & P
- 1 large bag Wide Egg noodles cooked to aldente and drained.
