Lemon and Oregano Chicken

Preheat the oven to 350 degrees F
- One 4- to 4 1/2-pound chicken, cut into 10 pieces
- Kosher salt and ground black pepper
- 2 tablespoons olive oil
- 3 shallots, cut into 1-inch-thick pieces through the stem
- 2 cloves garlic, smashed and roughly chopped
- 2 medium leeks, white part only, sliced into 1 1/2-inch rounds and rinsed
- One 14-ounce can whole artichoke hearts in water, drained
- 5 tablespoons fresh oregano leaves
- 3 tablespoons unsalted butter, cut into pieces
- 1/3 cup dry white wine
- 1 1/2 cups chicken broth or stock
- 1/2 lemon, thinly sliced into rounds

In a large frying pan, heat the oil over moderate heat
- 3 tablespoons cooking oil
- 1 onion, cut into thin slices
- 3 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 2 1/2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1/4 teaspoon dried red-pepper flakes
- 1/8 teaspoon turmeric
- 1/2 teaspoon salt
- 2 tablespoons water
- 1 1/2 pounds sirloin steak, cut into 1-inch cubes

- 1/2 cup basil, 12 leaves, a couple of handfuls
- 1 small clove garlic, cracked from skin
- 1/4 cup grated Parmigiano-Reggiano or Romano, a generous handful
- 1/3 cup extra-virgin olive oil, eyeball it
- Salt and pepper
- 2 plum tomatoes, seeded then thinly sliced lengthwise

Grilled Halibut with Brown Butter-Citrus-au Poivre Vinaigrette

Heat a charcoal or gas grill to high
- Four 6-ounce halibut fillets
- 2 tablespoons canola oil
- Kosher salt and freshly ground black pepper
- 1 stick (8 tablespoons) unsalted butter, cut into pieces
- 1 small shallot, thinly sliced
- Juice and 1 teaspoon zest from 1 orange, plus zest for garnish
- Juice and 1 teaspoon zest from 1 lemon, plus zest for garnish
- 1 teaspoon chopped fresh thyme, plus sprigs for garnish

- Dough:
- 1/4-ounce package yeast
- 1/2 cup warm water
- 1/2 cup scalded milk
- 1/4 cup sugar
- 1/3 cup butter or shortening
- 1 teaspoon salt
- 1 egg
- 3 1/2 to 4 cups all-purpose flour
- Filling:
- 1/2 cup melted butter, plus more for pan
- 3/4 cup sugar, plus more for pan
- 2 tablespoons ground cinnamon
- 3/4 cup raisins, walnuts, or pecans, optional
- Glaze:
- 4 tablespoons butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 3 to 6 tablespoons hot water

Use room temperature butter to grease an 8 inch souffle mold

- 2 T grated Parmesan cheese
- 3 T butter
- 3 T flour
- 1 t dry mustard
- 1/2 t garlic powder
- 1/8 t salt
- 1 1/3 C hot milk
- 4 large egg yolks
- 6 oz sharp cheddar
- 5 egg whites plus 1 T water
- 1/2 t cream of tartar

- 12 oz. chunk smoked turkey
- 2 bag walnut & cranberry spring mix salad
- 2 apples
- 4 oz. Cheddarella or Cheddar cheese
- 1/2 c. sliced red onion
- 1/2 c. bottled honey-mustard dressing
- 2 slice 7-grain or other whole-grain bread, toasted

- 1/2 cup hazelnut liqueur (recommended: Frange lico)
- 1 cup melted semisweet chocolate
