Texas Rising Chili Con Carne

Preheat the oven to 350 degrees F
- Perry County Corn Bread:
- 3 dried ancho chiles
- 1 dried chile d'arbol
- 1 dried New Mexico or pasilla chile
- 1 tablespoon ground cumin
- 1 teaspoon Mexican oregano
- 6 slices thick-cut bacon, cut into lardons or 1/4-inch strips
- 4 pounds trimmed chuck roast, cut into 1-inch cubes
- Salt and freshly ground black pepper
- 1 medium onion, diced
- 4 jalapenos, ribs and seeds removed, diced
- 3 cloves garlic, minced
- 4 cups beef stock, hot, plus more if needed
- One 14-ounce can crushed tomatoes
- 2 tablespoons cornmeal
- Juice of 2 limes
- Perry County Corn Bread, recipe follows, for serving
- Suggested toppings: crispy bacon, French-fried onions, crushed tortilla chips, sliced avocados and corn nuts
- 1 stick (8 tablespoons) butter
- 2 cups self-rising cornmeal
- 1/4 cup self-rising flour
- 1 teaspoon salt
- 1 cup buttermilk, plus more if needed
- 2 eggs

- Roasting spaghetti squash is a very simple dish to master, and yet it's impressive enough to serve up at a dinner party. It's a great alternative to heavy pasta and it's a delicious, nutritious base for all your favorite sauces and toppings.
- Technique tip: A fork will help you easily scrape the squash "noodles" out of the skin.
- Swap option: You can serve the squash with your favorite pasta sauce or simply drizzle with olive oil and parmesan cheese instead of the pesto.
- Ingredients
- BASIL PESTO (MAKES ABOUT 1 CUP)
- 1/4 cup pine nuts
- 2 cloves garlic, roughly chopped
- 1/2 cup grated Parmesan cheese
- 2 cups torn basil leaves

Christmas Queso

Add the cheese to a saucepan and melt over medium heat
- 2 pounds queso blanco-style processed cheese, such as Velveeta Queso Blanco, cut in 1/2-inch cubes
- 2 cans diced tomatoes and green chiles, such as Rotel
- 1 jar diced pimientos
- 2 jalapenos, seeded and chopped finely
- Tortilla chips, for serving
SEA SCALLOPS ALLA CAPRESE

Preheat a gas grill or prepare a fire in a charcoal grill
- 2 pounds mixed great heirloom tomatoes
- 24 fresh basil leaves
- 3 medium red onions, cut into 1-inch-thick slices
- Kosher salt and freshly ground black pepper
- 5 to 6 tablespoons extra-virgin olive oil
- 12 giant diver scallops (about 2 ounces each)
- 2 tablespoons Maldon salt or other coarse sea salt
- 1 lemon, cut in half

- 1 cup onions, chopped small
- 1/2 cup celery, chopped small
- 1/4 cup carrots, chopped small
- 1/4 pound pancetta, ground (you can ask your butcher to do this)
- 1 pound veal
- 1/2 pound ground beef
- 1 pound ground pork
- 2 cups whole milk
- 1 cup white wine
- 1/2 cup tomato paste

- Parmigiano-Reggiano
- 1 3/4 to 2 cups cake flour
- 1 3/4 to 2 cups all-purpose flour
- 4 eggs
Fluffy Pancakes

Whisk the flour, confectioners' sugar, baking powder and salt in a large bowl
- 1 1/2 cups all-purpose flour
- 3 tablespoons confectioners' sugar
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1 1/4 cups milk
- 1 large egg yolk, plus 3 egg whites
- 4 tablespoons unsalted butter, melted and cooled, plus more for brushing
- 1/2 teaspoon pure vanilla extract
- Butter and maple syrup, for serving

- 12 carrots
- 3 tablespoons good olive oil
- 1 1/4 teaspoons kosher salt
- 1/2 teaspoons freshly ground black pepper
- 2 tablespoons minced fresh dill or parsley

Adjust an oven rack to the lower third of the oven and preheat the oven to 450 degrees F
- 1 1/2 pounds russet potatoes, (about 2 potatoes) diced into 1/3-inch pieces
- 1 onion, diced
- Salt and coarse ground black pepper
- 6 tablespoons unsalted butter, chilled and cubed
- 4 small sprigs rosemary
