- 1 lb maple cured bacon, thin or thick
- 2 lb maple sausage
- 18 eggs
- 1 Qt whipping cream
- 3 sticks butter
- 3 bags frozen hash browns at room temperature
- 8 oz real maple syrup
- 1 bunch spring onions white and green parts chopped and sauted in butter to soften
- 1 T ground nutmeg
- half package Knorr hollandise suace in cream to disolve

- 1 cup brown sugar
- 1/2 cup apple cider vinegar
- Greek Seasoning Blend and Pork:
- Vegetable oil, for oiling and drizzling
- 2 tablespoons dried oregano
- 2 tablespoons garlic powder
- 1 tablespoon dried thyme
- 1 tablespoon dried dill
- 1 tablespoon beef bouillon powder
- Large pinch salt
- Large pinch freshly ground black pepper

In a frying pan Saute the onion until brown in 2 T butter until brown
- 1 onion chopped
- 1/2 lb mushrooms sliced
- 1 package frozen chopped spinach thawed and drained
- 3/4 C bread crumbs
- cooking spray
- 3 C monterey jack cheese
- 10 eggs beaten
- 1 1/2 C 2% milk
- 3/4 C half and half

Combine all but garlic cloves in a sauce pan and reduce by half
- 3 T honey
- 1 750 ml bottle of dry chardonnay
- zest of 1 orange
- juice of 1 orange
- 3 sprigs of fresh thyme
- 1/4 C dried apricots
- 2 garlic cloves

Preheat the oven to 325 degrees F
- One 5- to 7-pound fully cooked boneless ham portion
- 2 tablespoons cloves
- 1 cup honey
- 1 can ginger ale
- 1/4 cup grainy brown mustard
- 1 tablespoon apple cider vinegar
Seared Pork Tenderloin with Rosemary - Red wine pan sauce

Pre heat oven to 450 Pat pork dry and season with salt and pepper
- PORK
- 1 T minced thyme
- 1 T minced rosemary
- 2 T EVOO
- 1 1/2 LB pork tenderloin
- S&P
- 2 T Dijon mustard
- SAUCE
- 2 M shallots thinly sliced
- 1 M garlic clove minced
- 1/2 C dry red wine
- 1 C beef broth
- 1 t minced rosemary
- 2 T buttere

Preheat oven to 300 Heat oil in a large dutch oven over high heat
- 2-3 T EVOO
- 4 lb chuck roast
- 1 Medium yellow onion chopped
- 1/3 C balsamic vinegar
- 3 T Dijon mustard
- 3 Sprigs Thyme
- 2 C beef stock
- 2 bunches small carrots, with tops cut off
- 1 lb very small baby potatoes

- FOR THE CRAB MIXTURE:
- 1 pound Dungeness crabmeat, picked over
- 1/4 white onion, minced
- 1 celery stalk, finely minced
- 1/4 medium red bell pepper, minced
- 1/4 cup packed cilantro leaves, finely chopped
- Juice of 1 lemon
- 2 teaspoons kosher salt
- FOR THE CRAB CAKES:
- 1/4 cup mayonnaise
- 2 eggs, beaten
- 2 tablespoons pureed chipotle chiles
- 1 to 1 1/2 cups homemade bread crumbs, dried out
- Panko bread crumbs (available in Asian markets)
- Oil, for shallow frying
- FOR SERVING:
- Tamarind Sauce (see recipe below)

- 1 pint cherry tomatoes, chopped in half
- 2 medium zucchini, diced

- 1 medium green bell pepper, diced
- 1 red bell pepper, diced
- 1 large red onion, diced
- 2 cans (2-1/4 ounces each) sliced ripe olives, drained
- 1 bottle (16 ounces) Italian salad dressing
- 1/4 cup grated Parmesan cheese
- 1 tablespoon sesame seeds
- 1 teaspoon paprika
- 1/2 teaspoon celery seed
- 1/4 teaspoon garlic powder
