Grilled Artichokes with Green Goddess Dressing

Slice the tops off the artichokes, pull off the small leaves, trim the stems and snip off the thorny tips
- Green Goddess Dressing:
- 6 globe artichokes
- 1 tablespoon plus 1/2 teaspoon kosher salt
- Juice of 1 lemon
- 3 tablespoons olive oil
- Green Goddess Dressing, recipe follows
- Lemon wedges, for garnish
- 1 cup mayonnaise
- 1/2 cup creme fraiche
- 1/4 cup chopped fresh flat-leaf parsley leaves, plus more for garnish
- 3 tablespoons chopped fresh chervil
- 2 tablespoons chopped fresh tarragon
- 3 fresh chives, chopped
- 3 cloves garlic
- 2 anchovy fillets, chopped
- Juice of 2 lemons
- Kosher salt and freshly ground black pepper
- 1 to 2 teaspoons honey
- 2 to 3 tablespoons olive oil
Cherries Jubilee

In a small dish, combine a little cherry juice with sugar and cornstarch
- 2 (15-ounce) cans whole Bing cherries in juice, drained and ju ice reserved
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1/4 cup kirsch or cognac, warmed
- 2 pints vanilla ice cream
Spicy Mediterranean Chicken

My wife told me what we had and I threw this together
- 4 large chicken breasts, boneless skinless
- 1 Zucchini cut into large match stick sized pieces
- 1 yellow squash cut into large match stick sized pieces
- crumble feta
- 4 slices prosciutto
- 2 14.5 oz cans Italian stile diced tomatoes
- 1/4 C tomato paste
- 1/2 C red wine
- 1 T Italian seasoning
- 1 t salt
- 1/2 t red chili flakes
- 1 t minced garlic
- 1 T EVOO
BALSAMIC ROAST CHICKEN

This recipe calls for a whole bird; however, I prefer to butterfly the bird and do it in a large cast iron skillet
- 2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 medium red onions, chopped
- 1 roasting chicken (6 to 7 pounds)
