Hearty Ten-Vegetable Stew

1. Trim thin slice from stem ends of 1 pound mushrooms and then slice thin
- 2 2 2 Tablespoons vegetable oil
- 1 1 1 Pound white button mushrooms
- table salt
- ground black pepper
- 1/2 1/2 8 1/2 Large bunch Swiss chard (about 8 ounces) *
- 2 2 2 onions
- 1 1 1 celery rib
- 1 1 1 carrot
- 1 1 1 red bell pepper
- 6 6 6 garlic cloves
- 2 2 3/4 Teaspoons minced fresh thyme leaves or 3/4 teaspoon dried
- 2 2 2 Tablespoons all-purpose flour
- 1 1 1 Tablespoon tomato paste
- 1/2 1/2 1/2 Cup dry white wine
- 3 3 3 Cups vegetable broth * *
- 2 1/2 2 1/2 1/2 Cups water
- 8 8 2 Ounces red potatoes (about 2 medium)
- 2 2 2 parsnips
- 8 8 8 Ounces celery root
- 2 2 2 bay leaves
- 1 1 8 Medium zucchini (about 8 ounces)
- 1/4 1/4 1/4 Cup minced fresh parsley leaves
- 1 1 1 lemon
- 1/2 to 5 to spinach, stemmed and sliced 1/2 inch thick, can be substituted for the chard leaves (omit the stems). The kale may require up to 5 minutes of additional simmering time to become tender.
Fresh Apple Cake

Cake: Preheat oven to 350 degrees
- Cake Ingredients:
- 1 c vegetable oil
- 2 c sugar
- 3 eggs
- 3 c flour
- 1 tsp baking soda
- 2 tsp vanilla extract
- 1 c chopped pecans
- 3 c peeled and chopped apples
- Frosting Ingredients:
- 1/2 c butter
- 1 c brown sugar, packed
- 1/4 c evaporated milk
- 1/2 tsp vanilla

- For Nuoc Cham dipping sauce:
- 5 1/2 tablespoons sugar
- 3/4 cup warm water
- 1/4 cup plus 1 tablespoon Asian fish sauce (preferably from Phu Quoc)
- 2 tablespoons rice vinegar (not seasoned)
- 2 teaspoons fresh lime juice (optional)
- 2 garlic cloves, minced
- 2 fresh Thai chiles (2 to 3 inches; preferably red; including seeds), thinly sliced crosswise For spring rolls
- 7 1/2 oz very thin bean thread noodles (in small skeins, also known as cellophane or mung bean noodles*)
- 2 oz dried wood ear mushrooms
- 1 medium shallot
- 2 garlic cloves
- 2 cups grated carrots (4 to 5 carrots)
- 1 lb ground pork shoulder
- 1/4 cup Asian fish sauce (preferably from Phu Quoc)
- 1/4 cup plus 1 teaspoon sugar
- 2 1/2 teaspoons black pepper
- 2 teaspoons salt
- 1 lb shrimp in shell, peeled and deveined
- 25 (8-inch) spring roll wrappers
- 1 large egg yolk, lightly beaten
- About 6 cups vegetable oil

- 1/2 cup extra-virgin olive oil
- 2 small onions, finely chopped
- 2 garlic cloves, finely chopped
- 2 stalks celery, finely chopped
- 2 carrots, peeled and finely chopped
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper

- 2 tablespoons active dry yeast
- 1 tablespoon white sugar
- 2 1/2 cups warm water (110 degrees F)
- 2 tablespoons shortening
- 2 teaspoons salt
- 7 cups all-purpose flour
- 3 egg whites, stiffly beaten
- 1 egg white (for egg wash)
- 2 tablespoons cold milk

- 1 teaspoon salt
- 1/2 pound (2 sticks) unsalted butter, cut into 1-inch pieces
- 1 1/4 cups sugar, divided
- 1 large egg
- 1/8 to 1/4 teaspoon almond extract, or to taste
- 2 tablespoons lemon juice

- 8 lemons, preferably thin-skinned and seedless

How many ways can you make a meat loaf? I don't know but it seems as if each cook has a meat loaf recipe
- 1 1/2 pound lean ground beef
- 1/2 pound ground pork or pork sausage (lean as possible)
- 2 cups fresh bread crumbs, about 4 slices
- 1/2 cup milk
- 1/2 cup red onion, minced
- 2 egg, beaten
- 1 teaspoons salt
- 1/4 teaspoon pepper
- 2 teaspoons Horseradish, optional
