Sauerkrautsuppe (Sauerkraut Soup)

You should try this tart soup
- 12 oz Sauerkraut, drained
- 1 1/2 lb Ham Bone (with meat)
- 5 Peppercorns
- 2 Bay Leaves
- 50 fl. oz. Water
- 4 medium Potatoes, peeled and cubed
- 1 oz Butter
- 2 Onions, chopped
- 2 tbsp Plain Flour
Shrimp Tomato Risotto

Tomatoes: 1. Use tomatoes held at room temperature until fully ripe
- 2 pounds fresh tomatoes
- 2 tablespoons vegetable oil
- 1 teaspoon minced garlic
- 1 (15-ounce) can unsweetened coconut milk
- 1 cup long grain white rice
- 1 (4 1/2-ounce) can chopped mild green chilies
- 1 (8-ounce) can crushed pineapple in juice, drained, reserve 1/4 cup juice
- 1 cup curry powder
- 1 teaspoon salt
- 12 ounces shelled and deveined cooked shrimp
Thom's Chicken Cacciatore for One

This is my favorite Chicken Cacciatore recipe trimmed down to 1 serving
- 2 tablespoons flour
- 1 teaspoons salt
- 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- 1 chicken breast half
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 cup minced onion
- 1/4 cup minced green pepper
- 1/2 cup mushroom, cut up
- 7-8 ounces canned tomatoes, chopped
- 1 tablespoons tomato paste
- 1/4 teaspoon garlic, minced
- pinch red pepper
- 1/4 teaspoon oregano
- 4 tablespoons sherry
- hot cooked spaghetti or rice, optional

Donna's best dessert. This is a recipe that has been handed down from Donna's family and to her from her mother
- 2 cups sugar, plus 1 teaspoon
- 1 cup flour
- 5 egg
- 4 cups milk
- 1 dash salt
- 1 stick butter
- 1 teaspoon vanilla extract
- 5 banana, sliced
- 18 ounces vanilla wafer cookies
- 1/2 teaspoon cream of tartar
Risotto With Pancetta and Wild Mushrooms

A wonderfully hearty dish, perfect for an autumn evening
- 3 tablespoons butter
- 1/2 medium onion, finely chopped
- 2 ounces pancetta, cut into ¼" strips
- 1 cup rice
- 1 cup white wine
- 3 cups chicken stock
- 4 ounces fresh wild mushrooms, shiitake, oyster, cremini or portobello
- 1 ounce dried mushrooms, morels or porcini
- 1/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped parsley
- salt and pepper, to taste

Here I am after a long summer bursting with trips and frivolity
- 3 ripe but firm tomatoes
- kernels from 5 ears of corn
- 1 red bell pepper
- 1 yellow bell pepper
- 1 yellow onion, chopped
- 1 red onion, chopped
- 4 garlic cloves, peeled and minced

Red Beans and Rice Soup

This mild-tasting soup is kid-friendly, and the combination of beans, rice and sausage is a great source of protein
- 1 pound dried red beans, picked over, then soaked for at least 8 hours or overnight, rinsed
- 1 tablespoon olive oil
- 6 to 8 ounces smoked turkey kielbasa, diced
- 1 cup chopped onion (from 1 medium onion)
- 3/4 cup diced celery (from 2 to 3 ribs)
- 1/2 cup diced red bell pepper (from 1 small pepper)
- 2 or 3 cloves garlic, minced
- 2 teaspoons packed dark brown sugar
- 1 1/2 teaspoons fresh thyme leaves
- 2 bay leaves
- 2 tablespoons apple cider vinegar
- 7 cups homemade or no-salt-added chicken broth, or more as needed
- 2/3 cup raw basmati or jasmine rice
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper

- 1 (15 oz.) can black beans, rinsed and drained
- 1 (15 oz.) can kidney beans, rinsed and drained
- 1 (4.5 oz.) can diced green chili peppers
- 1 (14.5 oz.) can diced tomatoes
- 2 1/2 cups chicken broth, low sodium, fat-free (use more broth for a thinner soup)
- 1 cup frozen or fresh corn
- Juice from 1 lime
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper (more or less to taste)
- 1/2 teaspoon black pepper
- Kosher or sea salt to taste
