Cook green beans in pressure cooker for five minutes
- 1/2 gallon green beans
- 1 1/2 cups sugar
- 1 1/4 cups vinegar
- 1 cup oil
- 3 cloves garlic
- 1 large onion, cut up
Harvest Pot Roast

At any time of the year an old fashioned pot roast is welcome around my house
- 1 large onion, cut into thick slices
- 2 carrots, cut into 1" pieces
- 3 beets, cut into 1" pieces
- 12 ounces mushrooms (wild or domestic), cut into pieces
- 4 garlic cloves, minced
- 1 can (14 1/2 ounces) tomatoes
- 2 tablespoons Dijon mustard
- 2 tablespoons Worcestershire Sauce
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup red wine (optional)
- 1 chuck roast (2 1/2 -3 pounds)
- 1 cup ketchup

Drippings

Place your roasting pan with pan drippings over 2 burners on medium-high heat
- 4 tablespoons Drippings
- 4 tablespoons Flour
- 3 cups Turkey Stock
- 1/2 cup Reserved Ancho Chili Water (from Ancho-Chili Maple Turkey)
- 1 tablespoon Thyme Leaves
- Kosher Salt and Freshly Ground Black Pepper
Pressure Cooker Split Pea and Ham Soup

KEA's Note: This is my Mom's famous split pea soup recipe that I adapted to the pressure cooker
- 1 pound dried split peas
- 8 cups water
- 1 small ham bone or 1 pound ham, chunks
- 1 onion, diced
- 2 carrots, diced
- 2 celery ribs, diced
- 1 1/2 teaspoons dried thyme
- sherry wine, optional
Chicken Soup with Cabbage and Apple

1. Heat a skillet over medium heat
- 2 teaspoons caraway seeds
- 1/2 teaspoon fennel seeds
- 1 tablespoon olive oil
- 1 1/2 cups chopped onion
- 1/2 cup chopped carrot
- 1/2 cup chopped celery
- 3 garlic cloves, minced
- 4 ounces chicken apple sausage, sliced
- 5 cups Chicken Stock or fat-free, lower-sodium chicken broth
- 8 ounces chopped Yukon gold potato
- 3 cups thinly sliced green cabbage
- 2 cups shredded cooked chicken breast (about 8 ounces)
- 2 cups sliced Granny Smith apple
- 1 tablespoon cider vinegar
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper

This has become a staple for me: tasty, cheap, and nutritious
- For red beans:
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 medium green bell peppers, chopped
- 3 stalks celery, chopped
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 5 cloves garlic, minced
- 12 ounces pickled pork, cut into 1-inch pieces, recipe follows
- 3 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon hot sauce
- 1/2 teaspoon cayenne pepper
- 2 quarts water
- 1 pound red kidney beans, rinsed and picked of debris
- For rice:
- 3 cups water
- 1 1/2 tablespoons unsalted butter
- 2 cups long-grain rice
- 1/2 to 1 teaspoon kosher salt

- 1 cup mayonnaise
- 2 tablespoons gherkins, chopped
- 1 teaspoon fresh parsley, chopped
