Chicken & Dumpling Casserole

I've always been intimidated with the thought of making chicken and dumplings
- 3-4 cups of cooked chicken (I use a rotisserie chicken)
- 2 cups chicken broth
- 1/4 cup unsalted butter
- 1 cup flour
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1 can Campbell's cream of chicken soup
Empanadas

For the empanada dough: Combine the flour, baking powder, sugar and salt in a large bowl
- 3 cups all-purpose flour, plus more for the work surface
- 1 tablespoon baking powder
- 2 teaspoons sugar
- Pinch salt
- 1/2 cup lard or shortening
- 1 egg
- 3/4 cup chicken stock
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 tablespoon garlic salt
- 2 tablespoons tomato paste
- 2 tablespoons vinegar
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon seasoned salt
- 5 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 medium onion, chopped
- Oil or shortening, for frying
- 1 cup real mayonnaise, such as Kraft
- 1 tablespoon adobo sauce
- Juice of 1/2 lime
White Bean Soup (Slow Cooker)

I don’t know about you, but I love crock pot recipes
- 1 pound dry white beans
- 4 cloves garlic, minced
- 1 small onion, chopped
- 2 stalks celery, chopped
- 4 carrots, chopped
- 4 cups organic vegetable broth
- 4 cups water (you can also use 8 cups broth or 8 cups water)
- 1 bay leaf
- 2 sprigs fresh thyme
- 1 tablespoon oregano
- 2 cans organic BPA free diced tomatoes
- salt to taste
- Parmesan cheese for topping (optional)
