- 1/2 pound smoked bacon, diced
- 1/4 cup chopped tasso (sub ham if unavailable)
- 1 1/2 cups chopped yellow onions
- 3/4 cup chopped celery
- 3/4 cup chopped green bell peppers
- 1 pound andouille or chaurice sausage, 1-inch dice (sub Kielbasa or Spanish/Portuguese chorizo)
- 3 tablespoons chopped garlic
- 1 pound dried red beans, soaked overnight, drained, rinsed, and picked over
- 4 cups chicken stock
- 3 cups water
- 1/2 teaspoon cayenne (or more, to taste)
- 2 bay leaves
- 1/4 to 1/2 teaspoon ground allspice (or 1 fresh allspice leaf)
- 2 Tablespoons chopped fresh flat leaf parsley
- 2 teaspoons fresh thyme (sub 1 teaspoon dried thyme)
- 2 Tablespoons dark roux (optional)
- 1/2 teaspoon salt, to taste
- 1 teaspoon freshly ground black pepper
- 4 cups cooked long grain white rice
- 1/2 cup chopped green onions, garnish
- Shaker of cayenne, for garnish
- Shaker of Creole seasoning, for garnish (optional)
Texas Barbecue Beef Brisket

Coals should be in a single layer with space between each briquette
- 7 pounds beef brisket, boneless
- Oak, pecan, mesquite, or hickory chips, water soaked 30 minutes
- 2 teaspoons paprika
- 1 teaspoon black pepper, divided water
- 1 medium grated onion
- 1 tablespoon butter
- 1 1/2 cups catsup
- 1 tablespoon fresh lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon hot pepper sauce

1. Fry the diced bacon in a large skillet over medium heat, stirring often, until almost crisp
- Mix dressing ingredients in measuring cup:
- 4 large potatoes, boil in their jackets, peel and slice
- 5 thick slices of bacon diced
- 1 Cup chopped onion
- 1 . 1/4 Cup wine vinegar
- 2 . 1/4 Cup water
- 3 . 1/4 Cup sugar
- salt and pepper to taste

Combine all ingredients; mix well
- 1 1/2 cups mayonnaise
- 2 egg yolk, hard cooked, sieved
- 2 tablespoons fresh parsley, minced
- 2 tablespoons vinegar
- 1 tablespoon paprika
- 1 1/2 tablespoons prepared mustard
- 1 1/2 teaspoons Worcestershire sauce
- 2 cloves garlic, crushed
- 1 dash Louisiana-style hot sauce
- 1 pinch salt
- 1 pinch pepper
