Who’d a thunk we’d finally have a snow day around here? Best of all, it’s President’s Day so lots of folks...
- 2 tablespoons olive oil
- 2 onions, finely chopped
- 2 carrots, peeled and chopped
- 3 garlic cloves, peeled and chopped
- 2 teaspoons chopped fresh thyme leaves
- 6 cups chicken broth
- 2 (15 ounce) jars roasted sweet red bell peppers preserved in water, drained
- 1 russet potato, peeled and coarsely chopped
- 1/2 cup dry white wine
- 1 tablespoon sugar
- Salt and freshly ground black pepper
- 1 cup heavy cream
- 1 pound jumbo lump crabmeat
- creme fraiche for garnish (optional)
Baked Mashed Potatoes

Preheat oven to 350 degrees F (175 degrees C)
- 5 pounds Yukon Gold potatoes, peeled and cubed
- 1/2 cup butter
- 1/4 cup milk
- 1 (8 ounce) package cream cheese, softened
- 1 onion, grated
- 1 egg
- salt and pepper to taste

These are fall off the bone tender and the taste is impressive
- 1/3 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 to 3 lbs boneless beef short ribs
- 1/4 cup butter
- 1 cup chopped onion
- 1 cup beef broth
- 3/4 cup red wine vinegar
- 3/4 cup brown sugar
- 1/4 cup chili sauce
- 2 tablespoons catsup
- 2 tablespoons Worcestershire sauce
- 2 tablespoons minced garlic
- 1 teaspoon chili powder

I love tomato soup of all kinds
- 1/4 cup butter, plus 2 tablespoons
- 2 large red onion, thinly sliced
- 1 bay leaf
- 1 teaspoon thyme
- 1 teaspoon basil
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1 (28 oz. can) Italian style tomato
- 1 can tomato puree
- 1/2 cup all-purpose flour
- 2 pints light cream
- 2 tablespoons brown sugar
- 3 tablespoons fresh parsley, chopped
- 2 cups milk
- 1 tablespoon cream sherry

- 1 tablespoon +1 tsp. ground cumin
- 1 tablespoon garlic powder
- 1 tablespoon mustard powder
- 1 teaspoon salt
- 3/4 teaspoon ground thyme
- 3 pounds pork shoulder roast - boneless/fat trimmed, cut 2 inch pieces
- 1 cup ketchup
- 1 onion, chopped
- 2 tablespoons cider vinegar
- 2 tablespoons molasses
- 1 tablespoon Worcestershire sauce
- 1 tablespoon packed dark brown sugar

In a bowl, mix together the spice rub
- 2-3 lbs. bone in beef short ribs
- 1 Tbsp olive oil
- 15 oz. can tomato sauce
- 1/2 C balsamic vinegar
- 1/4 C brown sugar
- 6 cloves of garlic, minced
- 2 Tbsp kosher salt
- 1 tsp dried rosemary
- 1 tsp dried rubbe dsage
- 1/2 Tbsp galric powder
- 1/2 Tbsp onion powder
- 1 tsp oregano
- 1 tsp paprika
- 1/2 tsp black pepper

Roasted Leg of Lamb

Use only organic or all-natural products and ingredients
- Marinade
- 1/2 cup orange juice
- 1 cup white wine
- 3 cloves garlic, minced
- 2 teaspoons of fresh thyme or 1 teaspoon of dried thyme
- 2 Tbsp of fresh chopped rosemary or 1 Tbsp of dried rosemary
- 1/4 teaspoon of fresh ground pepper
- 2 Tbsp olive oil
- Lamb Roast
- 1 (6-pound) leg of lamb, bone-in or boneless. If boneless, the leg should be tied up with kitchen string by butcher.
