Tennessee Puddin' Cake and Sauce

CAKE: 1. Cream butter and sugar until smooth
- CAKE:
- 1 cup sugar
- 1 stick butter, softened
- 1/2 cup buttermilk
- 1 1/2 cups flour
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 teaspoon soda
- 1 1/2 teaspoons baking powder
- 2 eggs
- SAUCE:
- 2 cups sugar
- 1/2 teaspoon salt
- 2 tablespoons flour, heaping tablespoons
- 3 tablespoons cocoa, heaping tablespoons
- 3 cups whole milk
- 1/3 stick butter
- 1 teaspoon vanilla
German Chocolate Cake

Butter two 9-inch cake pans, then line the bottoms with rounds of parchment or wax paper
- 2 ounces bittersweet or semisweet chocolate – chopped
- 2 ounces unsweetened chocolate – chopped
- 6 tablespoons water
- 8 ounces (2 sticks) unsalted butter – at room temperature
- 1 1/4 cup + 1/4 cup sugar
- 4 large eggs – separated
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk – at room temperature
- 1 teaspoon vanilla extract
Sweet Smoked Salmon

Coat the fish completely in kosher or rock salt for and set in refrigerator for 12-14 hours
- Kosher or rock salt
- Salmon filets cut into 6 oz chunks with skin on
- 2 quarts soy sauce
- 2 cups brown sugar
- 1-cup honey
- 2 tbsp ground black pepper
- Suggested wood chips
- Barkless alder
Colcannon

The following Colcannon recipe is my (Frances Peffly Moore) version
- 3 Pounds potatoes, peeled and quartered
- Water
- 1 Teaspoon salt
- 4 Cups fine chopped kale (stuff and pack measuring cup)
- 1 Large chopped onion
- 1/2 Cup butter
- Salt/ pepper to taste
- 1 Pound smoked sausage links (Cut into 6 pieces)
Chow Mein

Chow mein is a generic Chinese term for a dish of stir-fried noodles, of which there are many varieties
- Marinade:
- 1 pound mung bean sprouts
- 15 ounces seitan
- 1/2 pound dry wonton noodles
- 2 medium ribs celery
- 1 pound bok choy or broccoli
- 1/2 pound fresh mushrooms
- 1 red bell pepper
- 1/2 red onion
- 1 green onion (scallion, spring onion)
- vegetable oil for frying and stir-frying, as needed
- 1/4 cup toasted sesame seeds
- 1/4 cup finely chopped shiitake mushrooms
- 2 teaspoons sesame oil
- 1 teaspoon soy sauce
- Salt and pepper, to taste
- 1/2 teaspoon cornstarch
- Sauce:
- 1/4 cup water or low-sodium vegetable broth
- 1 tablespoon soy sauce
- Salt and pepper, to taste
- 1 tablespoon cornstarch
- 4 tablespoons water
Southern-Style Chicken and Dumplings

Place the chicken, onions, carrots, and celery in a large stock pot and cover with water
- 1 large fryer chicken (4-5 lbs.), neck and gizzards removed
- 1 large onion, peeled and cut in half
- 3 carrots, cut into large pieces
- 3 stalks of celery, cut into large pieces
- Kosher salt, to taste
- Pepper, to taste
- 3 cups cake flour
- 3/4 tsp. baking soda
- 3/4 tsp. salt
- 4 1/2 tbsp. shortening*
- 1 cup milk
- I imagine you could use butter, but I haven’t tried it. I’ve never been a fan of shortening, but I stuck to the recipe because I didn’t want to mess with its “right”-ness. You know Cracker Barrel and Southern grandmas aren’t afraid of using shortening.
Spaghetti Sauce

Sauté garlic in butter until light brown
- 2 cloves garlic
- 1 tablespoon butter
- 1/2 pound ground beef
- 1 can tomato sauce
- 1 can tomato paste
- 2 ripe tomato, chopped
- 1 teaspoon brown sugar
- 1/2 teaspoon oregano
- 1/4 teaspoon rosemary
- 1 bay leaf
- salt and pepper
- 1/4 cup grated cheese
- 1/2 pound fresh mushrooms, sliced

- 1/2 cup of light brown sugar, packed
- 1 (6 ounce) can of pineapple juice
- 1/3 cup of soy sauce
- 2 tablespoons of cornstarch
