- 1 6oz. can frozen orange juice concentrate

- 1/4 cup sugar

No Meat Chili

Heat oil in 3-quart saucepan; add onions, celery and garlic
- 1 tablespoon vegetable oil
- 2 medium (1 cup) onions, chopped
- 2 ribs (1 cup) celery, sliced
- 1 teaspoon finely chopped fresh garlic
- 1 cup beer or vegetable broth
- 1 (28-ounce can) tomatoes, cut up
- 1 (15-ounce can) black beans, rinsed, drained
- 1 (15½-ounce can) pinto beans, rinsed, drained
- 1 tablespoon chili powder
- 1 teaspoon sugar
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground red pepper
- 2 tablespoons chopped fresh basil leaves*

1 In 5-quart stockpot, heat oil over medium-high heat
- 1 tablespoon olive oil
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 4 cups reduced-sodium chicken broth (from 32-oz carton)
- 3/4 cup uncooked elbow macaroni
- 2 cans (15 oz each) cannelloni beans, drained, rinsed
- 1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
- 1/2 lb ground Italian sausage, browned and drained
- Grated Parmesan cheese, fresh thyme and crushed red pepper flakes, if desired

- 1 1/2 cups whole milk
- 12 ounces bittersweet chocolate, coarsely chopped
- 1/2 cup brewed strong coffee
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 5 egg yolks
- 7 egg whites
- confectioner's sugar

- ORANGE SAUCE:
- 1 tube (8 ounces) refrigerated crescent rolls
- 4 small Granny Smith apples, peeled and halved
- 1 teaspoon sugar
- 1 teaspoon ground cinnamon
- 3/4 cup orange juice
- 1/2 cup sugar
- 1/2 cup butter, cubed
- 2 tablespoons chopped pecans, toasted

- For the sauce:
- 4 supremes (boneless, skinless chicken breasts)
- 1/2 teaspoon lemon juice
- 1/4 teaspoon salt
- Big pinch white pepper
- 5 tablespoons butter
- 1 tablespoon minced shallot or green onion
- 1/4 pound diced or sliced fresh mushrooms
- 1/8 teaspoon salt
- 1/4 cup white or brown stock or canned beef bouillon
- 1/4 cup port, Madeira or dry white vermouth
- 1 cup whipping cream

This is my favorite Chicken Cacciatore recipe
- 1/4 cup flour
- 1 1/2 teaspoons salt
- 1 teaspoon paprika
- 1/2 teaspoon pepper
- 1 (3 pound) whole chicken
- 1/3 cup butter
- 3 tablespoons olive oil
- 1/2 cup minced onion
- 1/2 cup minced green pepper
- 1/2 pound mushroom, cut up
- 1 can tomatoes
- 1 can tomato paste
- 1 teaspoon brown sugar
- 1 clove garlic, minced
- 1/8 teaspoon red pepper
- 1 teaspoon oregano
- 1/4 cup sherry

- fresh tomato, sliced
- fresh basil, finely sliced
- fresh parsley, finely chopped
