Thai Beef Salad, "Yum Nuea"

This recipe is taken from the Thai Kitchen at Import Foods with their permission
- Salad:
- 1 lb beef. Any beef can be used such as the top sirloin used in this recipe.
- 1/4 cup sliced onions, separated
- 2 tomatoes, wedged
- 1/4 cup sliced cucumber
- 1/4 cup thinly sliced Thai chili peppers
- Sauce:
- 1/4 cup fish sauce
- 1/4 cup lime juice
- 1 tablespoon sweet dark soy sauce
- 3 tablespoons minced garlic
- 3 tablespoons minced ginger
- 3 tablespoons chopped coriander/cilantro (including the roots)
- 1/4 cup chopped green onions (spring onions)
- 1/4 cup chopped shallots (small red or purple onions)
- 1 tablespoon sesame oil
- 1 tablespoon chili oil
- Nam Prik Narok (Hell Fire Sauce) - If you like it hot!:
- oil to deep fry
- 2 pound of filleted white fleshed freshwater fish
- 2 cups Thai chili peppers
- 1/2 cup garlic
- 1/2 cup shallots
- 3 tablespoons shrimp paste
- 1/4 cup fish sauce
- 3-4 tablespoons palm sugar.

- 6 6-oz Beef top-round steaks; tenderized and at room temperature, (see *)
- 3 cups Unbleached all-purpose flour
- 2 1/2 teaspoons Meat seasoning; (recipe below)
- 2 large Eggs
- 2 teaspoons Baking Powder
- 1 teaspoon Baking soda
- 2 cups Buttermilk; at room temperature
- 4 cups Peanut or canola oil; (up to 5 cups)
- Cream Gravy --
- 1/4 cup Leftover seasoned flour; (up to 1/3 cup)
- 4 cups Milk; at room temperature
- 1 teaspoon Salt; or to taste
- 1/2 teaspoon black pepper; or to taste
- 2 teaspoons Worcestershire sauce; or to taste
- 1/4 teaspoon Tabasco sauce; (or your favorite pepper sauce), or to taste
- Meat Seasoning --
- 1/2 cup Kosher salt
- 4 tablespoons Granulated garlic; or powdered
- 2 tablespoons Granulated onion; or powdered
- 4 tablespoons Black pepper
- 2 tablespoons White pepper
- 2 tablespoons Paprika
- 1 1/2 teaspoons Ground cumin
- 1 1/2 teaspoons Ground cayenne pepper
Beef Fillets with Cognac-Onion Sauce

- 2 (6- to 8-ounce) beef fillets
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon canola oil
- 1 tablespoon butter or margarine
- 1 small yellow onion, sliced and separated into rings
- 1 small red onion, sliced and separated into rings
- 1 bunch green onions, chopped
- 6 shallots, chopped
- 2 garlic cloves, minced
- 1/4 cup cognac (¼ cup red wine or beef broth may be substituted for cognac)
- 1/4 cup beef broth

- 1/2 teaspoon salt
- 2 teaspoons olive oil

- 1 medium Bermuda onion, cut into ¼-in slices
- 1 aluminum foil, heavy duty, (8" x 18")
- 1 head red leaf lettuce

- 1/2 pound ham hocks, or 1/4 pound streak o' lean
- 4 cups water

- In a medium sauté pan, heat the butter until melted
- 4 large ripe pears (I used D’Anjou) peeled, cored and diced into 1/2″ squares – you can use whatever variety you prefer for baking
- 1 tbsp. butter
- 1 vanilla bean, split and seeds removed
- 3 tbsp. light agave nectar
- 2 tsp. ground cardamom
- 2 tsp. ground clove
- 1 tsp. ground cinnamon
- 1/2 tsp. fresh grated ginger
- 2 tbsp. flour (for work surface)
- 1 package pie crusts (2 per package) – thawed in the fridge. if you prefer to make your own pie crust, please do – choose whichever recipe is your favorite.

- 4 cups granulated sugar
- 1 cup skim milk
- 1 teaspoon pure vanilla extract
- 1 cup unsalted butter
- 1 tablespoon espresso powder
- 25 marshmallows, regular size
- 11 1/2 ounces milk chocolate chips, 1 package
- 12 ounces semi-sweet chocolate chips, 1 package
- 2 ounces unsweetened chocolate
- 1 11 oz bag caramel bits, or about 2 cups caramels
- 2 tablespoons heavy cream
- 1 tablespoon kosher salt

- 3 pounds bone-in, skin-on chicken breast halves, trimmed of excess fat and skin
- 1 tablespoon vegetable oil
- 3 medium jalapeño chiles
- 3 poblano chiles (medium), stemmed, seeded, and cut into large pieces
- 3 Anaheim chile peppers (medium), stemmed, seeded, and cut into large pieces
