Braised Pork Shoulder

Directions Preheat oven to 300 degrees
- 6 ounces pancetta, finely chopped
- 2 medium onions, thinly sliced
- 1 bone-in pork shoulder (6 to 7 pounds), skin on (if making potatoes), room temperature
- Coarse salt and freshly ground pepper
- 2 tablespoons extra-virgin olive oil
- 1 head garlic, minced
- 2 teaspoons fennel seeds, toasted and ground
- 1 teaspoon crushed coriander seeds
- 2 cups Belgian-style ale
- 1 cup homemade or store-bought low-sodium chicken stock
Ham and White Beans (Slow Cooker)

Rinse and sort the beans for any pebbles
- 1 lb package dried northern beans
- Ham bone, hocks, shanks or diced ham (about 1 pounds)
- 2 tsp onion powder
- Salt & pepper to taste

- 1 chicken, cut-up
- 2 teaspoons salt
- 4 cups boiling water
- 2 cups rice, uncooked
- 1 canned cream of chicken soup
- 1 canned cream of mushroom soup
- 1 canned cream of celery soup
Slow Cooker Vegetable Beef Soup

Brown the ground beef in a skillet and drain off the grease
- 1 lb ground beef
- 2 onions, diced
- 2 stalks celery including leafy tops, sliced
- 4 carrots, peeled and thinly sliced
- 1 small head cabbage, shredded
- 3 cups vegetables of your choice (I used a combination of yellow squash, corn and green beans)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups beef broth
- 2 cups water
- 1 tbsp worcestershire sauce
- 1 tbsp dried parsley
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp garlic salt
- 2 bay leaves
- salt and pepper
Pork Rub

Mix well. Apply liberally
- 1/4 cup brown sugar
- 1/4 cup Paprika
- 2 tblsp coarse Salt (sea or kosher)
- 2 tblsp Black Pepper
- 1 tblsp Cayenne Pepper
- 4 tsp Cumin
- 2 tsp dry mustard
- 2 tsp Onion Powder
- 2 tsp Garlic Powder
- 2 tsp Thyme Powder
- 2 tsp Sage
- 2 tsp Coriander Powder

You can cook this in the slow cooker
- 1 lb ground beef, cooked and drained
- 2 tsp. garlic, minced
- 1 C carrots,chopped
- 1 C celery, chopped
- 1 C onions, chopped
- 6 cubes beef bouillon
- 6 C water
- 15 oz can tomato sauce
- 32 oz can diced tomatoes
- 1 tsp salt
- 10 oz pkg frozen corn kernels or 1 can
- 1 tsp dried basil
- 4 Tbsp ketchup

You don't have to use elbow macaroni in this soup
- 1 pound lean ground beef
- 1 cup of celery, sliced
- 2 cans (14.5 ounce each) of stewed tomatoes
- 1 can (15 ounce) of tomato sauce
- 2 envelopes of Lipton Onion Soup mix
- 1/2 tablespoon sugar
- 16 ounces of frozen vegetables (I use peas, carrots, corn and green beans)
- 6 ounces (about 1 cup uncooked) elbow macaroni
- 1 Tablespoon Italian Seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups water
