Italian Beef Stew

Heat 2 Tbsp olive oil in a large enameled cast iron pot over medium-high heat
- 4 medium carrots, chopped into 1/2-inch thick pieces (2 cups)
- 3 stalks celery, chopped into 1/2-inch thick pieces (1 1/2 cups)
- 1 large yellow onion, diced
- 3 cloves garlic, finely minced
- 5 Tbsp extra virgin olive oil, divided
- 2 1/2 lbs rump roast, trimmed of fat and cut into 1-inch pieces
- 1/3 cup all-purpose flour
- salt and freshly ground black pepper
- 4 cups low-sodium beef broth
- 1 Tbsp red wine vinegar
- 2 (15 oz) cans diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried thyme
- 3/4 tsp dried rosemary, crushed
- 1/2 tsp dried marjoram
- 2 bay leaves
- 1 1/2 lbs Russet potatoes, peeled and diced into 1-inch pieces
- 8 oz cremini mushroom, sliced
- 3 Tbsp chopped fresh basil
- 2 Tbsp chopped fresh parsley
- Parmesan or Romano cheese, for serving (optional)
Châteaubriand

I am told that Châteaubriand is a small roast extravagantly cut from the center of the beef tenderloin
- 4 pounds beef tenderloin, whole
- extra virgin olive oil
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 large shallot, peeled and chopped
- 1/2 cup red wine
- 2 tablespoons unsalted butter, chilled
Coq au Vin - 2 Days

Coq au Vin means rooster in wine
- If cooking the same day, add:
- Ideally a rooster, or 1 or 2 chickens (1.5kg, 3.5 lb), cut into 8 pieces or more
- 1/2 bottle of full-body Burgundy red wine (or Cotes du Rhone)
- 6 bacon slices (5 oz), diced
- 0.5 lb (250g) button mushrooms
- A dozen small white onions
- 2-3 cloves of garlic, mashed
- 2 carrots, peeled and quartered
- Sunflower oil, unsalted butter
- Bouquet of herbs: 2 sprigs of thyme and 1 bay leaf, tied all together with string
- Parsley
- Salt and pepper
- 1/4 cup of cognac or brandy

- 4 ounces blue crabmeat
- 10 ounces saltine crackers, crumbled
- 2 tablespoons red onion, chopped
- 1 tablespoon egg
- 1/2 teaspoon horseradish
- 1/2 teaspoon Worcestershire sauce
- 1 teaspoon sea salt
- 1/4 teaspoon fresh ground black pepper
- 1/2 teaspoon paprika
- 1 teaspoon dry mustard
- 1 dash Tabasco pepper sauce
- 1 tablespoon peanut oil

Trim any fat off the ribs and remove the overlapping piece of the meat on the bony side, if any
- 2 racks spareribs, about 2# each
- 3 tablespoons soy sauce
- 1 tablespoon dry sherry
- 4 tablespoons catsup
- 1 tablespoon orange juice, frozen concentrate
- 4 tablespoons sugar
- 2 tablespoons honey
- 1 tablespoon Hoisin sauce
- 1/2 teaspoon five-spice powder
- 2 drops red food coloring

Combine all ingredients in a 8 quart slow cookers
- 1 bag frozen Southern-style hash brown potatoes
- 1 large onion, chopped
- 1 cup chopped celery
- 2 cups fat-free, lower-sodium chicken broth
- 1 bag frozen green beans
- 1 1/2 cups barbecue sauce
- 3 chicken thighs, cubed
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 2 c pulled pork, chopped
- 2 (8-ounce) cans no-salt-added tomato sauce
- 1 (15 1/4-ounce) can whole-kernel corn, drained
- 1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
Chicken Chow Mein

Cook the noodles for 3 minutes in a pan of boiling water until al dente, or as per the package instructions
- 5 ounces dried yellow Shi wheat flour noodles* or medium egg noodles
- 1 teaspoon sesame oil, plus more as needed
- 11 ounces skinless chicken breasts, sliced into strips
- Dash dark soy sauce
- 1 teaspoon five-spice powder
- 1 teaspoon chile sauce, optional
- 1 tablespoon cornstarch
- 2 tablespoons groundnut oil (peanut)
- 1 red bell pepper, seeded and finely sliced
- 5 ounces bean sprouts
- 1 large spring onion (green), sliced lengthwise
- 2 tablespoons light soy sauce
- Freshly ground black pepper, finely ground
- Can be found at specialty Asian markets.

- 2 teaspoons Worcestershire sauce
- 1 teaspoon steak sauce
- 3 carrots, sliced
- 2 celery stalks, diced
- 1 green bell pepper, chopped
- 1 yellow onion
- 1/2 cup water
- 1/2 cup tomato juice
- Serving Ideas: Serve with mashed potatoes and a healthy bread.

This is my favorite fresh tomato soup
- 1 teaspoon margarine
- 2 tablespoons minced shallot
- 2 pounds fresh tomatoes, seeded and chopped
- 3/4 cup 2% low-fat milk
- 1/2 cup low-sodium chicken broth
- 1/2 teaspoon salt
- 1 Dash white pepper
- Fresh oregano leaves (optional)
