Tangy Broccoli Salad

MIX dressing, sugar and vinegar in large bowl
- 3/4 cup Mayo
- 2 Tbsp. sugar
- 2 Tbsp. white vinegar
- 1 bunch broccoli, cut into florets (about 6 cups)
- 6 slices OSCAR MAYER Bacon, cooked, crumbled
- 1/2 c. dried cranberries
- 2-3 Tbs. sunflower seeds
Cilantro Lime Salad Dressing

In a food processor, add all the ingredients, except for the olive oil
- 1 cup fresh cilantro
- 2 garlic cloves, roughly chopped
- 3/4 tsp Peruvian Lime seasoning
- 1/2 tsp hot chipotle seasoning
- Dash of True Lime
- 1/2-3/4 tsp lime sea salt
- Salt to taste
- 1 lime, juiced
- 2 Tbsp red wine vinegar
- 1/4 cup cotija cheese (or parmesan cheese)
- 2 Tbsp mayonnaise
- water
- 1 Tbsp water
- 1/2 cup extra virgin olive oil
- 1/4 cup chipotle oil
Apple-Sausage Stuffed Sweet Potatoes

Heat the oven to 350 degrees
- 4 large sweet potatoes
- 1 pound loose fennel sausage meat
- 1/4 cup chopped shallots
- 4 cloves garlic, minced
- 2 tablespoons minced fresh rosemary
- 1 large apple, peeled, cored and diced
- 1 cup cheddar cheese, shredded
- Kosher salt and ground black pepper
Black Bean Flautas with Avocado Dipping Sauce

In a small bowl, combine the red onion, chopped cilantro, and lime juice
- 1/2 cup chopped red onion
- 1/4 cup chopped cilantro
- Juice of 1 large lime
- 1 (16-ounce) can spicy vegetarian refried black beans
- 16 white corn tortillas, warmed (see note)
- Grapeseed, vegetable, or canola oil for pan frying
- Avocado Dipping Sauce (see recipe below)
- Chopped lettuce, cilantro, Cotija cheese, hot sauce, and lime wedges for serving
- 2 ripe avocados, halved and pits removed, scooped from their shells
- 1/4 cup chopped red onion
- Juice of 1 lime
- 1/4 cup chopped cilantro
- 1 jalapeno, chopped (for a less spicy version remove the seeds and ribs)
- 1 clove garlic
- 2 tablespoons water
- Kosher salt to taste
Chipotle Black Bean Soup

1. In bowl of blender, add 1 can black beans, chipotle chile and sauce and 2 cups water
- 3 cans (15.5 oz. each) GOYA® Black Beans, divided
- 1 chipotle chile, plus 2 tsp. chipotle chile sauce from 1 can (7 oz.) GOYA
- Chipotle Chiles in Adobo Sauce
- 2 tbsp. GOYA Extra Virgin Olive Oil
- ½ medium yellow onion, chopped
- ½ red bell pepper, finely chopped
- ½ green bell pepper, finely chopped
- 2 tsp. GOYA Minced Garlic, or 4 cloves garlic, finely chopped
- ½ tsp. GOYA Ground Cumin
- 1 GOYA Chicken Bouillon mixed with 2 cups water, or 2 cups chicken broth
- ½ cup sour cream
- 1 small tomato, finely chopped
- 2 tbsp. roughly chopped fresh cilantro
Jalapeno Potato Salad

Place potatoes in saucepan & cover with water
- 6 medium red potatoes, peeled & cubed
- 2 celery ribs, chopped
- 2 hard-cooked eggs, chopped
- 1/4 c. chopped onion
- 2 small jalapeno peppers, seeded & chopped
- 1/4 c. mayonnaise
- 3 tsp. spicy brown mustard
- 2 Tbs. southwest spicy sweet hot mustard
- 3 tsp. Tobasco
- 1/4 tsp. cumin
- 1/4 tsp. pepper
Bacon-Cheese Biscuits

Preheat the oven to 425 degrees F
- 4 slices thick-cut bacon
- 2 cups all-purpose flour, plus more for dusting
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 tablespoon chopped fresh chives
- 6 tablespoons cold unsalted butter, cut into small pieces, plus melted butter for brushing
- 1 cup grated Colby or cheddar cheese
- 1 cup buttermilk
Mexican Bean Pizza

Preheat oven oven to 350 degrees
- 2 Tbsp olive oil, divided
- 6 (6-inch) flour tortillas
- 1 1/2 cup shredded Cheddar cheese/Monterrey jack mix, divided
- 1/2 onion, chopped
- 1 (15 oz) can black Beans, drained
- 2 oz of canned diced green chilies
- salsa, sour cream and guacamole – optional for topping
Bacon Guacamole Grilled Cheese Sandwich

1. Cook the bacon until crispy and set aside on paper towels to drain
- 2 slices bacon
- 2 slices sourdough bread
- 1 tablespoon butter, room temperature
- 1/2 cup monterey jack and cheddar cheese blend, shredded
- 2 tablespoons guacamole, room temperature
- 1 tablespoon tortilla chips, crumbled (optional)
Waldorf Salad

Mix all ingredients together, serve immediately
- Maraschino cherries, halved
- Bananas, sliced
- Pineapple chunks, canned
- Mandarin oranges, canned
- Apples, chopped
- Red grapes, halved
- Cool whip
- Sour cream
- Mayonnaise
