  • 2 garlic cloves, roughly chopped
  • 3/4 tsp Peruvian Lime seasoning

  • 1/2-3/4 tsp lime sea salt
  • Salt to taste
  • 1 lime, juiced
  • 2 Tbsp red wine vinegar
  • 1/4 cup cotija cheese (or parmesan cheese)
  • 2 Tbsp mayonnaise
  • water
  • 1 Tbsp water
  • 1/2 cup extra virgin olive oil
  • 1/4 cup chipotle oil

In a small bowl, combine the red onion, chopped cilantro, and lime juice

  • 1/2 cup chopped red onion

  • 2 ripe avocados, halved and pits removed, scooped from their shells

  • 1 jalapeno, chopped (for a less spicy version remove the seeds and ribs)
  • 1 clove garlic
  • 2 tablespoons water
