Rudy's Pinto Bean Salad

Toss together and store in fridge
- Pinto Beans 2 pounds of pinto beans, cooked
- (1 whole onion, chopped
- 1 tablespoon paprika,
- 1 tablespoon garlic powder
- ½ pound bacon, cooked till crisp, drained on paper towel
- 1 tsp (touch) of cumin
- Salt/pepper
Beef and Pork Chipotle Chili with Beans

What folks in Texas call a "bowl o' red" - or what we Austrians might call American goulash
- Chili:
- 1/4 C. extra-virgin olive oil
- 2 lb. ground beef
- 1 lb. ground pork
- 1 C. chopped onion
- 3 garlic cloves, minced
- 2 to 3 Tbs. chipotle chili powder
- 2 Tbs. pure ground chili powder
- 2 Tbs. ground cumin
- 1 tsp. dried oregano
- 1 tsp. paprika
- 1 28-oz. can crushed tomatoes
- 2 C. good quality canned beef broth
- 1 C. dark beer
- 3 Tbs. tomato paste
- Salt
- Freshly ground black pepper
- 3 Tbs. masa harina (Mexican-style cornmeal)
- 1 15-oz. can red kidney beans, drained
- Garnishes:
- Tomato salsa
- Sour cream
- Shredded cheddar or Jack cheese
- Chopped sweet onion
- Sliced avocado
- Chopped fresh cilantro
- Corn tortilla chips
Rudy Davila's South Texas Mesquite Brisket

Soak mesquite chips in water for about 30 minutes before smoking
- cups seasoning made up of:
- Prepare fire with mesquite wood only in pit
- Rub: mix the following ingredients
- 1/4 cup finely ground black pepper
- 1/4 cup salt
- 1/4 / cup paprika
- 1 tablespoon sugar
- 1/4 teaspoon turmeric
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- Seasoning mix may be stored for a month in a sealed container
Cranberry Ring

1. In a large mixing bowl combine 1-1/4 cups of the flour, the yeast, cardamom, and nutmeg
- 2-3/4 * 2-3/4 to 3-1/4 cups all-purpose flour
- 1 * 1 package active dry yeast
- 1 * 1 teaspoon ground cardamom
- 1/4 * 1/4 teaspoon ground nutmeg
- 2/3 * 2/3 cup milk
- 1/3 * 1/3 cup sugar
- 1/4 * 1/4 cup margarine or butter
- 3/4 * 3/4 teaspoon salt
- 1 * 1 egg
- 1-1/4 * 1-1/4 cups cranberries
- 1/3 * 1/3 cup sugar
- 1 * 1 tablespoon water
- 1 * 1 teaspoon finely shredded orange peel
- 1/2 * 1/2 teaspoon ground cinnamon
- 1 * 1 cup sifted powdered sugar
- 4 * 4 teaspoons milk
- 1/4 * 1/4 teaspoon orange extract
BUTTERMILK PECAN PIE

- 1 unbaked pie crust
- 1-1/2 cups pecan halves
- ½ cup (1 stick) unsalted butter, at room temperature
- 1-1/2 cups granulated sugar
- ¼ cup firmly packed golden brown sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 3 tablespoons all purpose flour
- ½ teaspoon salt
- 1 cup buttermilk
CHICKEN TORTILLA SOUP

Combine first 13 ingredients in a 4-quart slow cooker
- 4 oz. skinned and boned chicken breast halves, cubed
- 2 cups frozen whole kernel corn, thawed
- 1 large onion, chopped
- 2 garlic cloves, pressed
- 2 (14-1/2 oz) cans low-sodium fat-free chicken broth
- 1 (10-3/4 oz) can tomato puree
- 1 (10 oz) can diced tomatoes and green chilies (Rotel)
- 1 tsp. salt
- 2 tsp. ground cumin
- 1 tsp. chili powder
- 1/8 tsp. ground red pepper
- 1/8 tsp ground black pepper
- 1 bay leaf
- 4 (5-1/2 inch) corn tortillas
- Garnish: Chopped fresh cilantro
Chicken Spaghetti Casserole

Cook spaghetti according to pkg
- 8 oz. uncooked spaghetti
- 1 8 oz. carton ricotta cheese
- 1 C. shredded mozzarella cheese, divided
- 2 Tbs. grated parmesan cheese
- 1/2 tsp. Italian seasoning
- 1/2 tsp. garlic powder
- 1 26 oz. jar meatless spaghetti sauce
- 1 14 1/2 oz. can Italian diced tomatoes, undrained
- 1 4 1/2 oz. jar sliced mushrooms, drained
- 4 breaded fully cooked chicken patties (10-14 oz.)
Candied Fruit Cake

Grease and flour 4 mini loaf pans or round casserole
- 1 egg
- 1/4 cup sugar
- 1/2 cup flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 cups pecan halves
- 1 (8 ounce) package pitted dates cut in half
- 1 (4 ounce) package candied cherries (red and green)
- 1 (4 ounce) package candied pineapple
- 4 tablespoons bourbon
- 1/4 jar of apricot jelly

- 1 large can crushed pineapple
- 1 large tub Cool Whip
