Eggnog Rum Cake

It's a cake that is substituted with eggnog and rum instead of the usual water or milk ingredients
- • 1 box Duncan Hines Yellow cake mix
- • 1 cup of eggnog
- • 1/4 cup of dark or spiced rum
- • Duncan Hines Vanilla frosting
DISD LUNCHROOM CHESS PIE RECIPE

This came from someone whose mother was a lunchroom cook, so it should be authentic
- 1 1/2 cup butter
- 1 1/2 cup sugar
- 1 1/2 tbls corn meal
- 1 1/2 tbls flour
- 4 eggs (beaten)
- 2 tsp vinegar
- 1 1/2 tsp vanilla
- 1/2 cup milk
- Pinch of salt
COCONUT BREAD

Preheat oven to 350. Mix coconut, flour, baking powder, salt and sugar
- 1 cup unsweetened coconut, toasted
- 2 cups flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 3/4 cup sugar
- 1 egg, beaten
- 1/4 cup oil
- 1 cup milk
- 1 teaspoon vanilla
6-Hour Chili

In a large sauté pan over medium-high heat, brown half the beef, about 10 minutes
- 5 lb. ground beef
- 5 garlic cloves, minced
- 1 yellow onion, chopped
- 1 can (28 oz.) chopped tomatoes with
- juices
- 6 to 8 Tbs. chili powder
- 2 tsp. dried oregano
- 1 tsp. ground cumin
- Salt and freshly ground pepper, to taste
- 1/3 cup cornmeal
- 2 cups unsalted beef stock
- Sour cream, chopped red onion, grated,
- cheddar cheese and/or chopped fresh cilantro
- for garnish
BEER MARGARITAS

Combine the beer, tequila, orange liqueur and limeade in a large pitcher and stir to blend
- 4 (12-ounce) bottles light-flavored beers, such as Tecate or Corona
- 1 cup tequila
- ½ cup orange liqueur, such as Grand Marnier
- 1 cup frozen limeade concentrate, thawed
- Lime wedges
- Kosher salt
Crispy Vanilla-Spice Sugar Cookies

Position an oven rack in the upper third of the oven; preheat to 350 F
- 3 2/3 cups flour
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons ground cinnamon (divided use)
- ½ teaspoon salt
- 8 ounces (2 sticks) unsalted butter, slightly softened
- 2/3 cup corn oil, canola oil or other flavorless vegetable oil
- ¾ cup powdered sugar
- 2/3 cup packed light brown sugar
- 1 tablespoon minced fresh ginger
- 1 large egg, plus 1 large egg yolk
- 2 ½ teaspoons vanilla extract
- 2 teaspoons finely grated lemon zest
- 1/3 cup sugar
- Additional colored decorating sugar, for garnish (optional)
Chilly Chocolate Mudslide

In a glass, combine cocoa mix with 2 ounces hot water
- One 25-calorie packet diet hot cocoa mix (like Swiss Miss Diet or Nestle Fat Free)
- 2 no-calorie sweetener packets (like Splenda)
- 2 ounces light vanilla soymilk
- 1 1/2 ounces vodka
- 1/2 ounce sugar-free calorie-free white-chocolate-flavored or vanilla-flavored syrup (like Torani Sugar Free; often found in the coffee aisle)
- 1 teaspoon light chocolate syrup (like the kind by Hershey's)
- 1 cup crushed ice or 5 to 8 ice cubes
- Optional topping: Fat Free Reddi-wip

- • 2 parts (4.0 cl) Vodka
- • 1 parts (2.0 cl) Peach Schnapps
- • 2 parts (4.0 cl) Orange juice

- Variation: Replace Orange Juice with Pineapple Juice
Dr Pepper Barbecue Sauce

Barbecue sauces flavored with soda are a great American tradition
- 1 large juicy lemon
- 1 clove garlic, peeled and lightly crushed with the side of a cleaver
- 1 thin (1/4-inch) slice onion
- 1 cup Dr Pepper
- 3/4 cup ketchup
- 3 tablespoons Worcestershire sauce
- 2 tablespoons A.1. steak sauce
- 1 tablespoon of your favorite hot sauce, or more to taste
- 1 tablespoon cider vinegar,or more to taste
- 1 teaspoon liquid smoke
- 1/2 teaspoon freshly ground black pepper
- Coarse salt (kosher or sea)
CINNAMON-SPICE OATMEAL RAISIN COOKIES

In a mixing bowl, sift together the flour, cinnamon, baking soda, baking powder, allspice and salt
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground allspice
- Pinch of salt
- 8 ounces unsalted butter, at room temperature, cut into small pieces
- 2/3 cup granulated sugar
- 2/3 cup light brown sugar
- 2 eggs
- 2 cups quick-cooking (not instant) rolled oats
- 2 cups seedless raisins
- 1 1/2 cups coarsely chopped walnuts
