Bayou Banana Puddin’ Recipe

- 1 8-oz package Philadelphia cream cheese
- 1 14-oz can sweetened condensed milk
- 1 5-oz package instant vanilla pudding mix
- 3 cups cold milk
- 1 teaspoon vanilla extract
- 1 8-oz container frozen whipped topping, thawed
- Half a 12-oz package of vanilla wafers
- 4 bananas, sliced
Cranberry Millet Muffin

1. Preheat oven to 350 degrees
- • Nonstick cooking spray
- • 2 cups all-purpose flour
- • 1 1/2 teaspoons baking powder
- • 1 teaspoon salt
- • 1/2 cup whole grain millet
- • 2 cups fresh or frozen cranberries
- • 1/2 cup (1 stick) plus 2 tablespoons unsalted butter, room temperature
- • 1 1/4 cup sugar
- • 2 large eggs
- • 1 teaspoon pure vanilla extract
- • 1/2 cup milk
Blue Ribbon Lemon Cake

Preheat the oven to 350 F
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 2 cups whole-milk yogurt
- 2 cups sugar
- 6 eggs, separated
- 2 tablespoons grated lemon zest
- 1 teaspoon vanilla extract
- Lemon Glaze (recipe follows)
- Lemon Curd Filling (recipe follows), or 1 cup prepared lemon curd
- Limoncello Icing or Lemon Icing (recipes follow)
- Meringue garnish (optional; recipe follows)
Baked Clubhouse Sandwiches

- 4 slices bread toasted
- 4 large slices chicken or turkey
- 4 slices ham
- 1 can condensed cream of mushroom soup
- 1/4 C. milk
- Paprika
Lemon-Blueberry Muffins

Preheat oven to 400 degrees
- 1 3/4 C. all-purpose flour
- 1/2 C. sugar -- plus 2 Tbs. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 C. walnuts, chopped
- 1 tsp. lemon, rind of, grated
- 1 large eggs
- 1 C. milk
- 4 Tbs. butter or margarine, melted
- 1 tsp. vanilla
- 1 1/2 C. blueberries
COAST TO COAST HOLIDAY CAKE

Heat oven to 325ºF. Lightly coat 9 x 3-inch springform pan with cooking spray; set aside
- Filling:
- • No-stick cooking spray
- • 1 1/2 cups (about 9 ounces) pitted dried plums
- • 1/2 cup water
- • 1 teaspoon ground cinnamon
- • 2/3 cup chopped walnuts
- Batter:
- • 3/4 cup butter, softened
- • 1 1/4 cups sugar
- • 3 large eggs
- • 1 cup sour cream
- • 1 teaspoon vanilla extract
- • 3 cups all-purpose flour
- • 2 teaspoons baking powder
- • 1 1/2 cups fresh cranberries or frozen cranberries, thawed
- • 1/2 cup (3 ounces) chopped pitted dried plums
- Topping:
- • 1/3 cup chopped walnuts
- • 1/4 cup sugar
- • 1/2 teaspoon ground cinnamon
