Jay's Marine Grill Onion Popovers

Preheat oven to 375. Heavily grease about 15 med-size muffin cups w/ solid shortening
- 10 large eggs ( eggs should measure about 1 liquid pint)
- 2 cups warm milk
- 2 cups all-purpose flour
- 1/2 c. chopped green onions (green part only)
- Pinch salt
Amaretto Italian Sour Cream Cake

Heat oven to 350 degrees. Using 2 tablespoons shortening, generously grease a 10 inch tube pan
- GLAZE:
- 2 eggs, separated
- 1/2 cup firmly packed brown sugar
- 1 cup coconut
- 1/2 cup ground pecans or nuts
- 1 package pudding-included butter recipe cake mix
- 1 cup dairy sour cream
- 3/4 cup amaretto
- 1/4 cup water
- 2 eggs
- 1 cup powdered sugar
- 2 tablespoons cocoa
- 2 tablespoons amaretto
- 1 tablespoon butter, softened
- 1 tablespoon corn syrup
- 2 to 4 teaspoons water
- 2 teaspoons ground pecans or nuts
- 6 maraschino cherries
CHICKEN POT PIE

Combine the chicken pieces, carrots, and broth in a saucepan and bring to a boil over high heat
- 1 lb. (450 g) boneless chicken meat, cut into 1-inch (2 cm) pieces
- 4 carrots, cut into 1/2-inch (1 cm) slices
- 2 cups (500 ml) chicken broth
- 4 Tbsp (60 ml) butter
- 1 cup (250 ml) sliced mushrooms
- 1 medium onion, chopped
- 1/2 tsp (2 ml) dried thyme
- 1/4 cup (60 ml) all-purpose flour
- Salt and freshly ground pepper to taste
- 1 cup (250 ml) heavy cream or half-and-half
- 2 cups (500 ml) frozen peas
- Pastry dough for 2 pie crusts, frozen or from your favorite recipe

- 1 tablespoon liquid Zatarian's Concentrated Crab and Shrimp Boil (optional)
- 1/4 cup apple cider
- 3/4 cup honey
- 1 (12-ounce) bottle beer
- 1 tablespoon salt
- 1 tablespoon ground allspice
- 1/2 cup Creole Seasoning
- 1/4 teaspoon cayenne
- 1/2 cup olive oil
- 1/4 cup finely minced garlic
- 1 10 to 12 pound turkey, rinsed well inside and out, patted dry
- 4 teaspoons Kosher salt
- 2 teaspoons freshly ground black pepper
- 1 to 2 cups chicken broth, as needed for bottom of roasting pan
BAKED SWEET POTATOES WITH SOUR CREAM AND BROWN SUGAR

- 1 cup dark brown sugar
- 1 cup granulated sugar
- 1/2 cup whole milk
- 2 tablespoons butter
- 1 dash salt
- 1 cup (heaping cup) pecan halves, coarsely chopped
E.J.'s Simple Oven-Barbecue Ribs

1. Preheat oven 300 degrees
- Rustic Rub:
- • 2 racks baby back ribs
- • 6 tablespoons Emeril's Rib Rub spice blend
- • 1 1/2 teaspoons coarse salt
- • 1 teaspoon freshly ground black pepper
- • 1 teaspoon celery salt
- • Emeril's Bam! B-Q Original Sweet Barbecue Sauce or other favorite barbecue sauce
- • 8 tablespoons paprika
- • 3 tablespoons cayenne
- • 5 tablespoons freshly ground black pepper
- • 6 tablespoons garlic powder
- • 3 tablespoons onion powder
- • 6 tablespoons salt
- • 2 1/2 tablespoons dried oregano
- • 2 1/2 tablespoons dried thyme
- Combine all ingredients and store in an air-tight container. Yield: 2 1/4 cup
CREAMY SCRAMBLED EGGS WITH SPINACH

Whisk together eggs, baking powder and tarragon in a bowl and season with salt and pepper
- 8 large eggs
- 1/2 tsp baking powder
- 1 tsp chopped fresh tarragon or 1/4 tsp dried tarragon, crumbled
- 1 Tbsp unsalted butter
- 3/4 lb baby spinach, coarsely chopped
- 2 oz cold Philadelphia¨ cream cheese, cut into 1/2-inch cubes
CRAB MEAT DIP

Mash eggs with potato masher; add crab meat and stir
- 1 can crab meat claws (drained)
- 6 boiled eggs
- ¾ cup celery hearts, diced fine
- 5 or 6 green onions, including stems
- 1 pint Kraft mayonnaise

- 1 1/2 fluid ounces vodka
- 1 tablespoon sugar
