TEXAS BRISKET WITHOUT THE SMOKE

1. Oven 325 degrees 2. Rub garlic into both sides of brisket
- 6 lb beef brisket
- 2 large garlic cloves, minced
- 1 T dried anchor chili or chipotle powder
- 1 T smoked paprika
- 1 T Kosher salt
- 1 t ground cumin
- 2 t brown sugar
- 1 t oregano
- Freshly ground pepper
CELERY CASSEROLE

1. Cook celery in small amount of boiling water for 8"
- 4 cups sliced celery
- 1-5 oz can water chestnuts
- 1 can cream of chicken soup
- 1/4 cup diced pimiento
- 1/4 cup toasted, sliced almonds
- 1/2 cup bread crumbs
- 2 TBS melted butter
STEAK TACOS WITH PICKLED ONIONS

ONIONS Place onions in medium heat-resistant bowl
- ONIONS
- 1 medium red onion, sliced thin (about 1 1/2 cups)
- 1 cup red wine vinegar
- 1/3 cup sugar
- 2 jalapeño chiles, stemmed, seeded, and cut into thin rings
- 1/4 teaspoon table salt
- HERB PASTE
- 1/2 cup packed fresh cilantro leaves
- 3 medium garlic cloves, roughly chopped
- 3 medium scallions, roughly chopped (about 1/3 cup)
- 1 medium jalapeño chile, stemmed and roughly chopped (see note)
- 1/2 teaspoon ground cumin
- 1/4 cup vegetable oil
- 1 tablespoon fresh lime juice
- STEAK
- 1 flank steak (1 1/2 to 1 3/4 pounds), trimmed of excess fat and cut lengthwise (with grain) into 4 equal pieces (see below)
- 1 tablespoon kosher salt or 1 1/2 teaspoons table salt
- 1/2 teaspoon sugar
- 1/2 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- TACOS
- 12 (6-inch) corn tortillas, warmed (see note)
- Fresh cilantro leaves
- Minced white or red onion
- Lime wedges
RUM CAKE

1. Oven 325. Grease and flour a tube pan
- Cake:
- 1 package yellow cake mix
- 4 eggs
- 1/2 cup vegetable oil
- 3/4 cup finely chopped pecans
- 1-3 oz package instant vanilla pudding mix
- 1/2 cup cold water
- 1/2 cup rum
- Glaze:
- 1/4 lb butter
- 1 cup sugar
- 1/4 cup water
- 1/2 cup rum
BLT SALAD

1. Adjust oven rack to middle position and heat oven to 475 degrees
- 3/4 cup mayo
- 4 1" thick slices Italian bread
- 12 slices thick bacon, chopped
- 3 TBS red wine vinegar
- 4 cups cherry tomatoes, halved
- 1 10 oz bag chopped romaine lettuce
- salt and pepper

1. Place flour, egg and breadcrumbs in separate shallow dishes
- 1/4 cup flour
- 1 large egg, lightly beaten
- 1/2 cup dried breadcrumbs
- coarse salt
- ground pepper
- 4 pork cutlets
- 1/4 cup vegetable oil
- 4 oz fresh mozzrella, sliced
- 4 ciabatta rolls
- 1 cup marinara - warmed
- 2 cups arugula
PUMPKIN CHILI

- Pumpkin Chili recipe:
- Brown 1 finely chopped yellow onion and a little garlic,
- Add and brown 1 lb ground turkey or chicken and pour off fat
- Add 1-2 Tbl cumin and 1 tsp chili powder
- Salt to taste (1-2 Tbl)
- Add 1 can fine diced tomatoes,
- 1 can pumpking puree (I like Trader Joes organic)
- 1 can chicken broth
- 1-2 cans white beans drained(I like a lot of beans)
- Chop a handful of cilantro and add

- 1/2 cup finely chopped fresh parsley
- 2 TBS minced fresh thyme
- 1 shallot, minced
- 1 TBS Dijon mustard
- 2 TBS olive oil
- 4 TBS butter, softened
- 4 lb top sirloin roast, fat trimmed to 1/4" thick
- 1 TBS salt
- 1 TBS pepper

- Brine:
- 1 pork tenderloin - 1 to 1 1/4 lbs
- 1/2 tbs olive oil
- 1 tbs pecan wood chips
- 1/8 cup maple syrup
- 1 1/2 cups waters
- 1/2 cup Kosher salt
