CHEESE PUFFS

Preheat the oven to 425 degrees F
- 2/3 cup water
- 3 tablespoon unsalted butter
- 1/4 teaspoon kosher salt
- 3/4 cup all-purpose flour
- 3 large eggs
- 1/2 cup finely grated Comte or gruyere cheese
- 2 tablespoons Dijon-style mustard
- 1/8 teaspoon freshly grated nutmeg
- Pinch of Cayenne
SAUTEED ASPARAGUS WITH BACON

1. Cook bacon over medium heat until brown and crisp; transfer to paper towel 2
- 2 slices bacon, cut into 1" pieces
- 1 # asparagus, trimmed and cut into 1'" pieces
- Coarse salt
- Ground black pepper
- 2 TBS dijon mustard
- 2-3 TBS fresh parsley
CARROT CAKE

Cake: 1. Oven 350 degrees
- Cake:
- 2 cups sugar
- 2 cups flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/4 tsp salt
- 3 cups raw, shredded carrots
- 1 cup cooking oil
- 4 eggs
- Cream cheese frosting:
- 1/2 stick butter
- 8 oz cream cheese
- 1 # powdered sugar
- 1 tsp vanilla
CRANBERRY CHOCOLATE BARS

- •2 packages (18 oz. ea.) refrigerated chocolate chip cookie dough
- •1 cup sweetened dried cranberries
- •3/4 cup chopped pecans, divided

- 1 1/4 lb ground chuck
- 1/4 cup fresh minced parsley
- 2 Tbsp. scallion, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 Tbsp. all-purpose flour
- 1 Tbsp. olive oil
- 2 cups onions, sliced
- 1 tsp sugar
- 1 tbsp. garlic, minced
- 1 Tbsp. tomato paste
- 2 cups beef broth
- 1/4 cup dry red wine
- 3/4 tsp kosher salt
- 1/2 tsp dried thyme leaves
- Cheese Toasts (see following)
- 4 tsp. minced fresh parsley
- 4 tsp. Parmesan cheese, shredded
ÉCLAIR CAKE

Mix milk w/ pudding, stir w/ whisk
- CAKE:
- 1 box graham crackers
- 2 small boxes instant vanilla pudding
- 1 8 oz container cool-whip
- 3 ½ cups milk
- (look for sugar free instant pudding and low calorie cool-whip)
- GLAZE:
- 2 sq unsweetened chocolate
- 3 TBS butter
- 2 tsp corn syrup
- 2 tsp vanilla
- 3 TBS milk
- 1 ½ cup powdered sugar
CORN SALAD W/ FETA AND HERBS

- 2 tap white winter vinegar
- 2 TBS olive oil

- 3 ears corn, scraped from ear, and any corn milik
- 6 oz crumbled FETA
- 1/2 minced shallot
- 1/3 cup chopped Klamath olives

- 1 TBS chopped fresh parsley

- 1 teaspoon Worcestershire sauce

- 1/2 teaspoon dried thyme
- 1 tablespoon olive oil

- 1 teaspoon olive oil

- 2 slices thick-sliced bacon, diced
- 1 cup grape tomatoes, halved
- 1/2 teaspoon sugar
- 1/2 cup thinly sliced leek
- 1/4 cup dry white wine
- 1/2 cup chicken broth
- 1 teaspoon red wine vinegar
- 1/4 teaspoon red pepper flakes
- 4 ounces dry bucatini pasta or 4 ounces spaghetti
- 1 cup fresh spinach leaves
- 1/4 teaspoon minced fresh thyme (or a pinch of dried thyme)
