Mini Sugar Cookie Fruit Pizzas

. Bake cookies as directed on package
- 1 (18-oz.) pkg. (20 cookies) Pillsbury® Ready to Bake!™ Refrigerated Sugar Cookies
- 1 (8-oz.) pkg. cream cheese, softened
- 2 tablespoons frozen limeade concentrate, thawed
- 1/2 cup powdered sugar
- 10 fresh strawberries, quartered
- 1 kiwi fruit, peeled, cut in half lengthwise and cut into 10 slices
- 1/2 cup fresh blueberries
- 1/2 cup fresh raspberries
Cinnamon Toast Pancakes

Grease a griddle or large skillet with vegetable oil spray and heat over medium-high heat
- Serves 4
- Vegetable oil spray
- Batter
- 2 large eggs
- 1/4 cup water
- 1 tbsp vanilla extract
- 1/2 cup almond flour
- 1/4 cup milled flax seed
- 1/4 cup bulk sugar substitute
- 1 tsp baking powder
- 1/8 tsp salt
- Cinnamon Sprinkle
- 1/4 tsp cinnamon
- 1 tbsp bulk sugar substitute
- Butter (may use light, trans-fat free buttery spread)
- Fresh blueberries or strawberries, for garnish
Breaded Chicken Parmesan

Cut the chicken breast horizontally (filet it) so you will end up with two thin pieces
- 12 ounces white meat chicken (one double breast)
- 1 tbsp grated Parmesan cheese
- 1/4 cup Italian-style bread crumbs
- 1 tsp garlic powder
- 1 tbsp onions, dried
- Crushed red peppers if desired
- 1 -2 tbsp olive oil
Make ahead frozen ravioli casserole

This is my great comforting dish after a long day
- Step 1:
- 1 lb frozen ravioli (any flavor you like)
- 1 (26 oz) jar marinara sauce or your favorite spaghetti sauce
- 3/4 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Preheat oven to 425 degrees F.
Mini Deep Dish Pizzas

1. Preheat oven to 425 degrees
- 3-4 whole wheat wraps (try to find ones with at least 3 grams of fiber or more per wrap)
- 1 (15oz) can pizza sauce (you may have some left over, depending on how much sauce you like)
- 3/4 cup shredded mozzarella cheese
- 1/4 cup parmesan cheese
- 48 mini turkey pepperonis (or the 12 whole turkey pepperoni’s, each cut into 4 even pieces)
- 1 tsp basil/oregano mix OR Italian seasoning
- 1/2 tsp garlic powder
- pinch of sweetener, (sugar/stevia/splenda)
- pinch of black pepper
- Put your own spin on these by adding anything that you would normally like on a pizza just before popping them in the oven!
Tuna Noodle Casserole

Blend soup and milk. Add noodles and tuna, mix well
- 1 can cream of celery soup
- 1 c. milk
- 8 oz. pkg. cooked noodles
- 1 large can flaked tuna
- 1/2 c. bread crumbs
- 2 T. melted butter
- 2 T. parsley
Skinny Artichoke Dip

A delicious hot artichoke dip baked with parmesan cheese, reduced fat mozzarella cheese and topped with bread crumb...
- 13.75 oz artichoke hearts packed in water, drained
- 2 tbsp chopped shallots
- 1/4 cup fat free Greek yogurt
- 1/4 cup light mayonnaise
- 1/3 cup Parmigiano Reggiano
- 1/2 cup (2 oz) shredded part skim mozzarella cheese
- salt and fresh pepper to taste
- 2 tbsp whole wheat bread crumbs
- olive oil spray
Pimento Cheese and Crackers

Process cream cheese, cheddar, pimentos, and Tabasco in a food processor until coarsely pureed
- 12 ounces whipped cream cheese
- 4 ounces cheddar cheese, grated (1 1/2 cups)
- 2 jars (2 ounces each) pimentos, drained
- 1/8 to 1/4 teaspoon Tabasco sauce
- Coarse salt and freshly ground pepper
- Crackers, for serving
Potato Salad with Vinaigrette

- 2 pounds potatoes
- 1/2 cup of the vinaigrette
- 2 tablespoons parsley
