Preheat oven to 350 degrees
- 8 soft taco size flour tortillas
- 2 1/2 cups shredded Monterrey jack cheese (or cheddar), divided
- 2 cups shredded cooked chicken
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 (4 oz) can diced green chiles or 1/2 cup verde salsa
- Chopped, fresh cilantro for garnish

Preheat oven to 300 degrees
- For a cinnamon sugar mixture:
- 1 large egg white
- 3 cups pecan halves
- 1/3 cup cinnamon & sugar
- use one tablespoon cinnamon to 1/4 cup sugar.
- Be sure to use good quality cinnamon.
- 2 teaspoons good vanilla
- 1/4 teaspoon salt

Season the chicken breasts with salt, half of the cumin, and 1 tsp of the chili powder
- 1.5 lbs boneless, skinless chicken breasts
- 1 can Ro-tel diced tomatoes, drained
- 12 oz cream cheese, softened
- 1 cup shredded cheddar or monterey jack cheese
- 1 clove garlic, minced
- 3 tsp ancho chili powder
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic salt (I like Lawry's)
- 1/4 cup cilantro, chopped
- 6 scallions, white and green parts, chopped
