I found this in the March 2007 Chatelaine magazine and the whole family loved it
- 2 tablespoons butter or 2 tablespoons margarine
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 1/2 cups milk
- 1 cup regular sour cream or 1 cup light sour cream
- 1 teaspoon vanilla
- butter or margarine, for cooking pancakes
- fresh blueberries (optional)
- fresh raspberry (optional)

Arrange salad ingredients on large plates, can prepare ahead and cover in fridge
- Dressing:
- Mixture of salad greens
- Shredded Cheddar Cheese
- Diced Tomatoes
- Sliced Cooked Chicken tossed with fajita seasoning or taco seasoning mixed with water to desired consistency
- Black beans
- 1/4 c. mayo
- 1/4 c. sour cream
- 1 T. milk
- 1/2 T. white vinegar
- 1 t. minced jarred jalapenos
- 1/4 t. parsley
- 1/8 t. hot sauce
- 1/8 t. salt
- 1/8 t. paprika
- 1/8 t. cayenne pepper (little less)
- 1/4 t. cumin
- 1/8 t. garlic powder
- 1/8 t. pepper
- Garnish: Guacamole, sour cream, olives, crushed tortilla chips or strips

Heat oven to 375 F. Grease two 7 or 8 ounce ramekins with coconut oil
- 2 tablespoons coconut oil (plus more to grease ramekins)
- 1 tablespoon unsweetened cocoa powder
- 3 ounces extra dark chocolate (72% cacao or higher)
- 1/2 teaspoon vanilla extract
- 1 tablespoon coconut milk
- 1 tablespoon honey (optional)
- 2 egg yolks
- 2 egg whites
- pinch salt
- pinch cream of tartar
Garlic Baked Shrimp

Instructions Preheat oven to 425 degrees
- 1 lb fresh, raw shrimp, deveined, peeled and tails removed
- 2 tbsp light butter, melted
- Juice from 1/2 a lemon
- 2 tbsp parsley, finely chopped
- 2 tbsp grated Parmesan cheese
- 1 tsp paprika
- 1/2 tbsp lemon zest
- 4 cloves garlic, minced
- 1 cup corn flakes cereal, crushed
- Salt & pepper to taste
