Mongolian Beef

Prepare the meat: First, make sure the steak slices are dry (pat them dry) and mix them with the corn starch
- 1 lb of flank steak, thinly sliced crosswise
- 1/4 cup of cornstarch
- 3 teaspoons of canola oil
- 1/2 teaspoon of grated ginger (about 1/2 inch piece)
- 1 tablespoon of chopped garlic (about 2 -3 large cloves)
- 1/2 cup of water
- 1/2 cup of soy sauce (I use low sodium)
- 1/2 cup brown sugar
- 1/2 teaspoon of red pepper flakes
- 3 large green onions, sliced crosswise into thirds
Blueberry Coconut Smoothie

Blend well
- 2 cups frozen or fresh blueberries
- 1 1/2 cups coconut water (or almond milk)
- 1/2 cup dried, shredded coconut (make sure you find an unsweetened, natural brand)
- 2 pitted dates (more if desired)
- 2 tablespoons chia seeds
- 1 handful spinach or any other greens
Traditional Salisbury Steak

In a small bowl, combine the egg, bread crumbs, garlic powder and pepper
- 1 egg
- 2 tablespoons dry bread crumbs
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 3/4 pound lean ground beef
- 3 tablespoons all-purpose flour, divided
- 2 teaspoons olive oil
- 3/4 cup water
- 2 tablespoons ketchup
- 2 teaspoons Worcestershire sauce
- 1 teaspoon beef bouillon granules
- 1 medium onion, quartered and sliced
- 1 (4 ounce) can mushroom stems and pieces, drained
Loaded Mashed Potatoes

Bake or microwave potatoes (I microwaved to save time) until fork tender
- 4-5 large red potatoes
- 1/2 cup butter, softened
- 1 cup sour cream
- 1/2 cup bacon, crumbled (about 4-5 slices)
- 1/4 cup green onions, sliced
- Kosher salt and pepper
Baked Garlic Parmesan Chicken

Preheat oven to 350 degrees
- Yields 2 servings
- Cooking spray
- 1 tablespoon olive oil
- 1/3 cup dry breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1-2 garlic cloves, minced
- 1 teaspoon dried basil
- Crushed red pepper, to taste
- 2 4-5 ounce boneless, skinless chicken breasts
- Salt and pepper, to taste

- 5 ounces mixed greens
- 2 oranges, segmented
- 1/4 cup crumbled goat cheese
- 1/4 cup pecans, chopped
- 3 tablespoons fresh lime juice

- 1 teaspoon Dijon mustard
- 1 teaspoon mayonnaise
- 1 teaspoon honey
- 1/3 cup extra-virgin olive oil

- 3 tablespoons olive oil
- 3 cloves garlic, chopped
- 2 onions, chopped
- 2 cups chopped celery
- 5 carrots, sliced
- 2 cups chicken broth
- 2 cups water
- 4 cups tomato sauce
- 1/2 cup red wine (optional)
- 1 cup canned kidney beans, drained
- 2 cups fresh or frozen green beans
- 2 cups baby spinach, rinsed
- 3 zucchinis, quartered and sliced
- 1 tablespoon chopped fresh oregano
- 2 tablespoons chopped fresh basil
