Homemade Hash Browns

Preheat the oven to 400 degrees F
- 1-2 medium russet potatoes
Quick and Easy Vegetable Soup

"A low calorie, but filling, tomato-based vegetable soup
- 1 (14 ounce) can chicken broth
- 1 (11.5 ounce) can tomato-vegetable juice cocktail
- 1 cup water
- 1 large potato, diced
- 2 carrots, sliced
- 2 stalks celery, diced
- 1 (14.5 ounce) can diced tomatoes with green chilies
- 1 cup chopped fresh green beans
- 1 cup fresh corn kernels
- salt and pepper to taste
- Creole seasoning to taste
Roasted Broccoli with Asiago

Oven-roasting creates a rich, caramelized taste that enhances the flavor of vegetables
- 1 1/2 pounds (about 1 large bunch) broccoli, stalks trimmed to 2 inches below crowns
- 3 tbsp olive oil
- 1/8 tsp crushed red pepper
- 1/8 tsp salt
- 1/4 cup grated Asiago cheese
2nd Grilled Chicken with Orange Chipolte Glaze

4 chicken breasts ¼ to ½ cup Beer Can Chicken Rub Orange Chipotle Glaze
- Beer Can Chicken Rub
- Adapted from America’s Test Kitchen
- 1/4 cup sweet paprika
- 1 tablespoon Kosher salt
- 1 tablespoon garlic powder
- 1 1/2 teaspoons dried thyme
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper
- 1/2 teaspoon celery salt
- Combine all ingredients in a small bowl. Store any extra rub in an airtight container. Makes about a 1/2 cup.
- Orange Chipotle Glaze
- 1/4 cup finely chopped onion
- 1 tsp olive oil
- Juice from two oranges
- 1 teaspoon finely grated orange zest (omit zest if using orange marmalade)
- 1/2 cup jelly (I used homemade pepper jelly that was tangy but not spicy, you could use apple jelly or orange marmalade)
- 1 teaspoon chopped fresh thyme
- 1 chipotle pepper in adobo sauce, finely chopped
- 1 teaspoon cornstarch
- 1/2 teaspoon kosher salt
Key Lime Pie Smoothie

Blend Well
- 2 cups Coconut Milk or Almond Milk
- 1/4 cup raw cashews (soaked if you do not have a high power blender to pulverize)
- 4 tablespoons lime juice
- 1/2 avocado
- 2 large handfuls of greens (Tessa used spinach)
- 1 large frozen banana
- 2 tablespoons coconut butter
- 2 tablespoons chia seed (optional)
- Splash vanilla extract (optional)
- Zest of one lime (to taste, optional)
- Liquid stevia (to taste)
Sun Dried Tomato, Basil, & Brie Spread

- 5 ounces brie cheese, room temperature
- 1/4 cup sun dried tomatoes, finely chopped
- 1 sprig (4-5 large leaves) fresh basil
- Coarse sea salt & freshly ground pepper, to taste

- 1 (16 ounce) package Pork Sausage, cooked, crumbled and drained
- 8 eggs, lightly beaten
- 1/4 cup milk or water
- 3/4 cup shredded Cheddar, mozzarella or provolone cheese
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil or butter
- 1/2 cup thinly sliced green onion
- 1/2 cup diced sweet red pepper (optional)
- 1 cup thinly sliced mushrooms or yellow squash (optional)
- 1 cup frozen Southern-style hash brown potatoes or diced, pre-baked red potatoes (optional)
- 1/4 cup Parmesan cheese (optional)
Baked Teriyaki Chicken Meatballs

I served these Teriyaki Chicken Meatballs as one of the appetizers on New Years Eve
- 2-1/2 lbs. ground chicken
- 1 cup Veri Veri Teriyaki Sauce
- 2 scallions, minced
- 1 tablespoon black sesame seeds
- 2 cloves garlic, through garlic press or minced
- 1/4 teaspoon crushed black pepper
- 3/4 cup panko bread crumbs
Crockpot Carne Asada

Wrap the bacon around the flank steak and place in a crockpot; cover with honey mustard dressing
- 1 flank steak
- 2 pieces of bacon
- 1/2 bottle of Newmans Honey Mustard Dressing
- 1 package of corn tortillas
- Shredded cheddar cheese for garnish
