In 9 x13 pan combine margarine and flour
- 1/2 C Margarine
- 1 C Flour
- 8 oz Philadelphia cream cheese
- 1 C powdered sugar
- 1 8oz box cool whip
- 3 C milk
- 2 pkgs instant lemon pudding
- Pecans if desired
Potato and Parmesan Cakes

Bring a saucepan of lightly salted water to a boil over high heat
- 1 lb 10 oz (750 g) baking potatoes, such as Burbank or russet, peeled and cut into 1 in (2.5 cm) chunks ( possibly use left over mashed potatoes)
- 3 tbsp all-purpose flour
- 1/3 cup freshly grated Parmesan
- vegetable oil for frying
- 1 large egg yolk
- 1 tbsp capers
- salt and freshly ground black pepper
- lemon wedges, to serve
Chinese Casserole

Preheat oven to 350 degrees F
- 1 pound hamburger
- 3/4 cup celery, chopped
- 3/4 cup onion, chopped
- 1 1/4 cups boiling water
- 1/2 cup uncooked rice
- 1/2 teaspoon salt
- 1 can chicken and rice soup
- 4 ounces mushrooms
- 1 tablespoon brown sugar
- 2 teaspoons soy sauce
- 1 teaspoon butter or margarine
- 1 1/2 cups chow mein noodles

- 1 Can Cream of Chicken Soup, low sodium (or Cream of Mushroom Soup)

- 1/2 cup cold butter or margarine
- 1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
- Filling
- 3 packages (8 oz each) cream cheese
- 1 cup sugar
- 1 teaspoon vanilla
- 3 eggs
- 1 can (14 oz) sweetened condensed milk (not evaporated)
- 3/4 cup Key lime juice
- 2 teaspoons grated lime peel
- 2 tablespoons flour
- Topping
- 3/4 cup reserved cookie crust crumbs
- 3/4 cup coconut
- 3/4 cup macadamia nuts, chopped

- 1/2 cup butter

- 1 cup peanut butter-and-milk chocolate chips
Asparagus,Chicken and Pecan Pasta

Cook pasta as directed on package and then drain Heat the olive oil in large pot over medium heat
- 5/8 pkg penne pasta 16 oz
- 2 tsp garlic minced
- Red bell pepper, chopped'
- 1 1/4 bunches asparagus, trimmed and cut into 1 inch pieces
- 2/3 C chicken broth
- 2 T and 2 tsp chopped fresh basil
- Salt to taste
- 1/4 tsp pepper'
- 2 T butter
- 11 ozs grilled chicken breast strips
- 1 C grated Parmesan cheese
- 1/3 C pecan halves (optional)

- 2 cups Colby cheese, grated - divided
