Preheat oven to 350 degrees F
- 1 (18.25-ounce) package white cake mix
- 1 cup water
- 1/2 cup coconut milk, divided
- 1/4 cup vegetable oil
- 2 eggs
- 1 (12-ounce) container frozen whipped topping, thawed
- 1 (6-ounce) package frozen grated coconut, thawed
Pan Roasted Chicken

- 4 boneless Chicken Breasts (skin on)
- Olive Oil
- Kosher Salt
- Freshly Ground Black Pepper
- 2 cups Mushrooms (preferably morels)

- 2 ounces White Wine

Mexican Chicken and Rice

# In a large skillet, brown chicken in butter
- 1 pound boneless skinless chicken breasts, cut into 1/2-inch strips
- 2 tablespoons butter
- 1-3/4 cups salsa
- 1 envelope (5.4 ounces) Mexican-style rice and pasta mix
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 2 tablespoons lime juice
- 1/2 cup shredded cheddar cheese
- 1 cup (8 ounces) sour cream
- 1 medium ripe avocado, peeled and cubed
- 1 medium tomato, chopped
Classic Carrot Cake

- 3/4 cup canola oil, plus more for pan
- 2 cups flour, plus more for pan
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1 tsp. kosher salt
- 1 1/2 cups sugar
- 1/2 cup buttermilk
- 3 tsp. vanilla extract
- 4 eggs
- 2 cups finely grated carrots
- 1 cup canned crushed pineapple, drained
- 1 cup coarsely chopped walnuts
- 1 cup sweetened flaked coconut
- 1/2 cup raisins

- 1/4 teaspoon baking soda
- 1 cup buttermilk
- 18 1/4 ounces Duncan Hines Moist Deluxe White Cake Mix
- 1 1/2 cups bananas, mashed
- 1 tablespoon oil
- 3 egg whites, whipped
- 1/2 cup walnuts, chopped
- 1/2 cup fat-free hot fudge topping
Pina Colada Cake

Preheat oven to 350 degrees, in large bowl combine cake mix, pudding, 1 cup cream of coconut, 1 C oil and eggs
- 1 pkg yellow cake mix
- 1 3/3 /4 oz pkg instant vanilla pudding and pie filling
- 1 15oz can coconut lopez cream of coconut
- 1 C plus 2 T rum
- 4 eggs
- 1 8oz can crushed pineapple in juice, well drained
- Whipped cream
- Pineapple slices
- Maraschino cherries
- Toasted coconut for garnish
Banana Bars with Cinnamon Frosting

- 1 1/4 cups all-purpose flour
