Hawaiian Pineapple Banana Bread

Preheat oven to 350 degrees F
- 3 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 3/4 teaspoon salt
- 1 cup chopped pecans or walnuts
- 3 eggs, beaten
- 1 cup vegetable oil
- 2 cups (about 5) mashed ripe bananas
- 2 teaspoons vanilla extract
- 1 (8-ounce) can crushed pineapple, drained
One Bowl Apple Cake

This cake is so moist and rich and just perfect for this time of year
- 2 eggs
- 1 3/4 cups sugar
- 2 heaping teaspoons cinnamon
- 1/2 cup oil
- 6 medium Gala or Fuji or Honey Crisp apples
- 2 cups flour
- 2 teaspoons baking powder
Baked Ziti

Heat oven to 375°F. Cook and drain pasta as directed on package
- 2 1/3 cups uncooked ziti pasta (8 oz)
- 1 lb bulk Italian pork sausage
- 3 cloves garlic, finely chopped
- 1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
- 1 cup chopped onion (1 large)
- 1/4 cup chopped fresh basil leaves or 2 teaspoons dried basil leaves
- 1 cup ricotta cheese*
- 1/4 cup Parmesan cheese
- 1 egg
- 1 cup shredded mozzarella cheese (4 oz)
- 1 Heat oven to 375°F. Cook and drain pasta as directed on package.
- 2 Meanwhile, in 12-inch skillet, cook sausage and garlic over medium-high heat, stirring occasionally to break up sausage, until sausage is no longer pink. Add cooking sauce, onion, basil, 1/4 teaspoon pepper and the cooked pasta; stir well.
- 3 In small bowl, mix ricotta cheese, Parmesan cheese and egg.
- 4 Spoon pasta mixture into ungreased 11x7-inch (2-quart) glass baking dish. Spoon ricotta cheese mixture on top; sprinkle with mozzarella cheese.
- 5 Cover casserole with foil spayed with cooking spray to prevent sticking. Bake 25 to 30 minutes, removing foil last 10 minutes of bake time, until cheese melts and mixture is hot and bubbly.
- Expert Tips
- Instead of ricotta cheese, you can substitute 3/4 cup cottage cheese and increase Parmesan cheese to 1/2 cup.

- 2 lbs lean ground beef

- 15.5 oz can black beans, drained & rinsed
- 12 small flour tortillas (make sure they are not the burrito size, should be about 6")
- 3 cups reduced fat mexican blend cheese
- 2 cups enchilada sauce (homemade or store bought)

- Additional cheese
- Pico de gallo
- Avocado slices or guacamole
Banana Split Cake

- Filling:
- 2 C crushed Graham crackers
- 1 stick butter melted
- Mix and spread in 9 x 13 pan
- 2 C powdered sugar sifted
- 2 sticks butter softened
- 2 eggs
- 1 tsp vanilla
- 2 Dream Whip boxes
Parmesan and Sage Crusted Pork Chops

Place bread in a food processor; pulse bread 10 times or until coarse crumbs measure about 1 cup
- 1 (1 1⁄4-ounce) slice white bread, torn into pieces
- or I use Italian bread crumbs
- 1/4 all-purpose flour
- 1 ⁄4 cup (1 ounce) grated Parmigiano-Reggiano cheese
- 1 tablespoon prepared mustard
- 1 tablespoon chopped fresh sage
- 2 large egg whites lightly beaten
- 1 ⁄4 teaspoon salt
- 4 (4-ounce) boneless thin-cut pork loin chops, trimmed

These are so good and are the only way to go as far as sweet potatoes go
- Crust:
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup chopped pecans
- 1/3 cup butter, melted
- Sweet Potato Mixture:
- 3 cups cooked and mashed sweet potatoes
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2 eggs, well beaten
- 1/2 cup (1 stick) butter, melted
- (splash of milk if needed)
Baked Fish with Shrimp

- 2 tablespoons all-purpose flour

- 1 cup milk
- 2 pounds red snapper fillets
- 1/2 pound cooked medium shrimp, peeled and deveined
- 1/4 cup grated Parmesan cheese
