Beef & Bean Enchiladas

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 lbs lean ground beef
  • 2 tsp salt
  • 2 tsp chili powder
  • 1 tsp pepper
  • 15.5 oz can black beans, drained & rinsed
  • 12 small flour tortillas (make sure they are not the burrito size, should be about 6")
  • 3 cups reduced fat mexican blend cheese
  • 2 cups enchilada sauce (homemade or store bought)
  • Optional Toppings
  • Sour cream
  • Fresh cilantro
  • Additional cheese
  • Pico de gallo
  • Avocado slices or guacamole

Preparation

Step 1

Preparing beef mixture
In a large skillet heat olive oil over medium heat
Add in chopped onion and cook until softened, 4-5 minutes
Stir in garlic & cook for an additional 1 minute
Add in ground beef, salt, chili powder & pepper and cook until browned, bearing it up as it cooks
Once ground beef is cooked stir in gently add in black beans
Making the enchiladas
Spread 1/2 cup enchilada sauce into bottom of prepared pan
Dip a tortilla in the enchilada sauce and place generous amount of beef and beef mixture down the middle of the tortilla
Sprinkle with some cheese and roll placing seam side down into the prepared pan
Continue until all enchiladas are rolled
Drizzle any remaining enchilada sauce over the top and sprinkle remaining cheese over the top
Cover and bake for 10 minutes, then remove foil and continue baking for another 15-20 minutes or until cheese is browned and bubbly
