- 8 ounces (2 sticks) unsalted butter, softened at room temperature
- 3/4 cup packed light brown sugar
- 1 egg
- 1/2 cup dark molasses (not blackstrap)
- 1/2 teaspoon pure vanilla extract
- 3 1/4 cups cake flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground cloves
- 2 cups or more confectioners' sugar
- 3 tablespoons milk

- (I used Duncan Hines and the cake mix called for 3 eggs, 1 1/4 cups water, and 1/3 cup oil.)

Pasta Caprese

The secret to mixing mozzarella cheese and not becoming gummy is to freeze the cheese before adding to the hot past...
- 1/4 cup extra-virgin olive oil
- 2-4 teaspoons fresh lemon juice (see note above)
- 1 small garlic clove, minced or pressed through a garlic press (about 1/2 teaspoon)
- 1 small shallot, minced fine (about 2 tablespoons)
- Salt and ground black pepper
- 1 1/2 pounds ripe tomatoes, cored, seeded, and cut into 1/2-inch dice
- 12 ounces fresh mozzarella cheese, cut into 1/2-inch cubes (see note above)
- 1 pound penne pasta or other short tubular or curly pasta such as fusilli or campanelle
- 1/4 cup chopped fresh basil
- 1 teaspoon sugar (see note above)

- CAKE:
- 3 cups flour
- 1/4 teaspoon salt
- 1 cup sugar
- 4 teaspoons baking powder
- 1 1/2 cups milk
- 2 eggs
- 2 teaspoons vanilla
- 1/2 cup real butter, melted, 1 stick
- TOPPING:
- 1 cup real butter, softened, 2 sticks
- 1 cup brown sugar
- 2 tablespoons flour
- 1 tablespoon cinnamon
- 3/4 cup chopped pecans, (optional) (always measure the nuts first then chop them)
- GLAZE:
- 2 cups powdered sugar
- 5 tablespoons milk
- 1 teaspoon vanilla

- 1 lb. Pasta (I used penne-you could use any fun shaped pasta)
- 1 cup Chicken Breasts, cooked and cubed
- 1 cup Ham, cooked and cubed
- 1 1/2 cups Milk
- 8 oz. Cream Cheese (softened)
- 2 Tbsp. Dried Minced Onion
- 2 cups Swiss Cheese, shredded
