- 2 teaspoons vegetable oil
- 2 small onions, chopped fine (about 1 1/2 cups)
- 2 medium carrots, peeled and cut into 3/4-inch pieces (about 2 cups)
- 1 celery rib, medium, chopped fine (about 1/2 cup)
- 1/4 cup dry sherry
- 6 cups low-sodium chicken broth
- 1 teaspoon minced fresh thyme leaves
- 1 pound chicken wings (see note)
- 1/4 cup chopped fresh parsley leaves
- 2 cups unbleached all-purpose flour (10 ounces)
- 1/2 teaspoon baking soda

- Ingredients:
- 1/3 cup granulated sugar
- 1 tsp ground cinnamon
- 3/4 cup + 2 Tbs all-purpose flour
- 3 Tbs cornstarch
- 1/4 (slightly heaping) tsp baking soda
- 1/4 (heaping) tsp fine sea salt
- 1 egg, beaten
- 1/2 cup canola oil
- 3/4 cup + 2 Tbs club soda

A spicy summer roll
- For the Spicy Peanut Sauce:
- 2 tablespoons creamy organic or natural peanut butter
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 2 teaspoons sugar
- 1/2 teaspoon of red pepper flakes
- 1 to 2 tablespoons water, to thin out the sauce, if necessary
- For the noodle filling:
- 1 1/2 ounces cellophane noodles (also called bean threads)
- 1/2 teaspoon sesame oil
- Red pepper flakes
- For the vegetable filling:
- 1/3 seedless cucumber
- 1/2 medium carrot, peeled
- 1/2 red bell pepper
- 2 to 3 medium radishes
- 1 scallion, chopped
- For the vegetable dressing:
- 1/2 tablespoon rice vinegar
- 1/2 teaspoon sugar
- 1 teaspoon fish sauce
- 1/2 lime, juiced, about 1 tablespoon
- To assemble the rolls:
- 8 rice paper wrappers
- 2 tablespoons cilantro leaves
