Baked Spinach-and-Artichoke Dip

1) Microwave spinach in a large, microwave-safe bowl on high 3 minutes or until wilted
- 2 (6-oz) packages fresh baby spinach
- 1 Tbsp butter
- 1 (8 oz) package 1/3-less-fat cream cheese
- 1 garlic clove, chopped
- 1 (14 oz) can artichoke hearts, drained and chopped
- 1/2 cup light sour cream
- 1/2 cup shredded part-skim mozzarella cheese, divided
- Fresh pita wedges or baked pita chips
Red Velvet Whoopie Pies

- Filling:
- 2 cup all-purpose flour
- 2 Tbsp unsweetened cocoa powder
- ½ tsp baking soda
- ¼ tsp salt

- 1 cup packed brown sugar
- 1 egg
- 1 tsp vanilla
- ½ cup buttermilk
- 2 Tbsp red food coloring
- ¼ cup butter, softened
- 4 oz package cream cheese, softened
- 1 (7oz) jar marshmallow crème

Place the flour in a food processor bowl with a metal blade
- 1 1/2 cups Semolina Flour
- 1 1/2 cups all-purpose Flour
- 1 tsp salt
- 4 eggs
- 2 tblsp extra virgin olive oil
Electric Lemonade

Mix the sugar and water in a small pot and boil for 3 minutes to make a simple syrup
- 2 cups sugar
- 2 cups water
- 1 cup fresh lemon juice
- 1 large sprig mint, finely chopped, plus sprigs for garnish
- 8oz lemon-flavored vodka
- Splash of sparkling water
- 1 Tbsp freshly grated lemon zest for garnish

- 1/3 cup wheat germ
- 1/4 cup sugar
- 1 egg, slightly beaten
- 1/3 cup water

- 1/2 tsp salt

- 2 cups corn flakes
- 1 cup shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 cups oatmeal

- 2 Tbsp flour
- 1 cup saltine cracker crumbs

Mushroom Risotto

1)Bring water, dried porcini mushrooms, and peppercorns to a boil in a medium pot
- 3 quarts water
- 1 oz dried porcini mushrooms
- 1 tsp whole black peppercorns
- 1 stick unsalted butter
- 8 oz mixed fresh mushrooms, such as porcini, chanterelle, and oyster, sliced if large
- 1 medium onion, finely chopped
- Coarse salt and freshly ground pepper
- 2 cups Arborio or Carnaroli rice
- 1 cup dry white wine
- 1 cup grated parmesan cheese
- Garnish: shaved parmesan cheese

- Crust:
- 1 cup vanilla wafer crumbs
- 6 Tbsp butter, melted
- ¼ tsp cinnamon
- ½ cup finely chopped pecans
- 2 Tbsp sugar
- Filling:
- 1 ¼ cup creamy peanut butter
- 1 cup conf. sugar
- 1 ¼ chilled whipping cream
- 18 oz pkg softened cream cheese
- 2 Tbsp butter, melted
- 1 Tbsp Vanilla
- Glaze:
- ½ cup whipping cream
- 4 oz finely chopped semi-sweet chocolate
