Mexican Winter Chili

1) In a dutch oven cook pork inhot oil over medium-high heat 5 minutes or until browned
- 1 lb. pork stew meat
- 2 Tbsp olive oil
- 1 large onion, chopped
- 1 medium fresh poblano pepper, finly chopped
- 1 large red sweet pepper, cut into 3/4-inch pieces
- 2 tsp unsweetened cocoa powder
- 1 tsp ground cumin
- 1/2 garlic powder
- 1/8 tsp ground cinnamon
- dash cayenne pepper
- 1 14 oz can chicken broth
- 1 15 oz can pumpkin
- 1/4 cup whipping cream
- Fresh cilantro (optional)
Chicken Lasagna

Cook noodles, drain. Cook onion and bell pepper in marg
- 8 oz lasagna noodles
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 3 Tbsp marg.
- 1 can cream of chicken soup
- 1/2 cup chopped pimento
- 1/3 cup milk
- 1/2 tsp basil
- 2 cups chopped cooked chicken
- 1 1/2 cup cottage cheese
- 1 1/2 cup american cheese
- 1/2 cup parmesean greated

- 8 corn tortillas, cut in 1" wide strips
- 8 oz (2c) shredded chedder cheese
- 1 cup sour cream
- 3 oz diced green chilis
- 1 cup sliced mushrooms
- 1 tsp chili powder
- 1 tsp cumin
Lemon-Mint Vinaigrette

- ½ cup olive oil
- ½ cup extra virgin olive oil
- 2 Tbsp finely chopped fresh mint
- 2 Tbsp finely chopped fresh parsley
- 6 Tbsp fresh lemon juice
- 1 Tbsp Dijon mustard
- 1 tsp sugar
- ½ tsp salt
