Stuffed Mushrooms with Pecans

1)Preheat oven to 350. Remove and discard root ends and dark green tops of leeks
- 2 medium leeks
- 1 16oz package fresh mushrooms (about 24 medium sized mushrooms)
- 1 tsp salt, divided
- 2 shallots, minced
- 2 garlic cloves, minced
- 2 Tbsp olive oil
- ½ cup grated Parmesan cheese
- ¼ cup fine, dry breadcrumbs
- ¼ cup pecans, chopped
- 2 Tbsp chopped fresh basil
- Garnish: fresh basil sprigs
Rum Cake

Combine cake and pudding mixes, add rum and eggs
- Glaze:
- 1 white cake mix
- 1 pkg instant vanilla pudding
- 1 cup walnuts
- 1 cup milk
- 1/2 cup rum
- 4 eggs
- 2 tsp flour
- 1/2 cup oil
- 1 oz rum
- 1 stick marg.
- 3/4 cup sugar
Sweet Cinnamon Quick Bread

Heat over to 350. Grease and flour bottom only of 9x5" loaf pan
- Streusel:
- 2 cups all purpose flour
- 1 cup sugar
- 4 tsp baking powder
- 1 1/2 tsp cinnamon
- 1 1/4 tsp salt
- 1 cup buttermilk
- 1/3 cup corn oil
- 2 tsp vanilla
- 2 eggs
- 2 tbls sugar
- 1 tsp margarine or butter, softened
Potato-Sour Cream Casserole

- 4 lbs potatoes (9 cups cooked)
- 1 1/2 cup sour cream
- 1/4 cup milk
- 1 Tbsp dried onion flakes
- 1 Tbsp chopped parsley
- 1 Tbsp salt
- 1 tsp white pepper

- 1/4 cup Cognac, preferably Remy Martin Grand Cru

- 1 small bag of chocolate chips
- 1 egg
- 2 egg yolks
- 2 egg whites
- 1 tsp rum
- 1/2 pint heavy cream
- 1 graham cracker crust
Patato Salad Dry Rub

- 2 tsp salt
- 1 ¼ tsp pepper
- 1 tsp paprika
- 1 tsp garlic powder
- ¼ tsp dried thyme
- ¼ tsp dried crushed rosemary

- 2 1/3 cups all-purpose flour
- ¼ cup plain yellow cornmeal
- 2 Tbsp sugar
- ¾ tsp salt
- ¾ cup cold butter, cut into ½-inch pieces
- ¼ cup chilled shortening, cut into ½-inch pieces
- 8 to 10 Tbsp chilled apple cider

- 1 graham cracker pie crust
- 2/3 cup chopped unsalted peanuts
- 1/2 cups karo syrup
- 1/3 cup creamy peanut butter
