No-Bake Peanut Butter Pie

Beat together cream cheese and confectioners' sugar
- Ingredients
- 1 (8 oz.) package cream cheese
- 1 1/2 C. confectioners' sugar
- 1 C. peanut butter
- 1 C. milk
- 1 (16 oz.) package frozen whipped topping, thawed
- 2 (9 inch) prepared graham cracker crusts

- Ingredients
- 2 medium stalks celery, chopped (1 cup)
- 4 cloves garlic, finely chopped
- 2 cans (14.5 oz each) reduced-sodium diced tomatoes with bell pepper and onion, undrained
- 1/2 cup chopped fully cooked turkey smoked sausage
- 1/2 teaspoon dried thyme leaves
- 1/4 teaspoon pepper
- 1/4 teaspoon red pepper sauce
- 3/4 lb uncooked medium shrimp (26 to 30 count), thawed if frozen, peeled (tail shells removed), deveined
- 1 cup uncooked long-grain white or brown rice
- 2 cups water
Chinese Chicken Salad

Directions For dressing, combine the first 3 ingredients in a small bowl and stir to dissolve
- 6 Tbs. seasoned rice vinegar
- 4 Tbs. white sugar
- 1 tsp. salt
- 1/2 C. peanut oil
- 3 boneless chicken breast halves, cooked and diced
- 1 head lettuce, torn into small pieces
- 4 green onions, sliced
- 4 stalks celery, sliced thin
- 1/2 C. walnuts, chopped
- 2 Tbs. sesame seeds, toasted
- 6 oz. Chinese noodles, heated briefly to crisp
- Directions
- For dressing, combine the first 3 ingredients in a small bowl and stir to dissolve. Add the oil and shake or blend well. Combine remaining ingredients in a large salad bowl and mix well together. Add the dressing and toss to coat. Serve immediately.

- 2 C. sugar
- 6 Tbs. flour (piled up)
- 3 eggs yolks
- 3 C. milk
- 2 9-inch prepared pie shells
- Meringue
- 3 egg whites (room temperature)
- 6 Tbs. sugar
- 1/2 tsp. cream of tartar

Preheat oven to 350 degrees F
- 2 cups Smithfield Ham, diced
- 1 bag hash browns
- 1 cup cheddar cheese, shredded
- 1 cup smoked gouda cheese, grated (can substitute cheddar)
- 1/2 cup green onion, chopped
- 5 eggs
- 1 cup milk
- 1/2 cup sour cream
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (omit if using Smithfield country ham)
- 3/4 cup butter melted

- 1 12-ounce can (1-1/2 cups) unsweetened pineapple juice, chilled
- 2 cups ice cubes
- 1-1/4 cups ginger ale (chill in bottle)
