Cauliflower Casserole

Directions Steam cauliflower for 4-5 minutes
- Ingredients
- 3 C. cauliflower, chopped
- 1 Tbs. non/low-fat margarine
- 3/4 C. onions, chopped
- 3/4 C. celery, chopped
- 4 mushrooms, chopped
- 3/4 C. vegetable stock
- 1 1/2 tsp. Italian seasoning
- 3/4 C. breadcrumbs
Loaded Baked Potato Salad

Directions: 1 Cut potatoes into bite sized pieces
- 5 -6 red potatoes, unpeeled
- salt & pepper, to taste
- 1 pint sour cream
- 1 cup finely shredded cheddar cheese
- 2 green onions, sliced
- 1/2 bag of recipe ready bacon bits
Mac & Cheese

1 Make a roux by melting butter in pan and adding flour
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1 dash pepper
- 1/2 teaspoon mustard powder
- 1 cup milk
- 1 cup cheddar cheese, shredded
- 2 cups macaroni, cooked
- 1 pinch cayenne (optional)

Mary's Pecan Pie Muffins

These were unbelievably easy and tasted amazing! Highly recommend making these
- 1 cup light brown sugar
- 2 eggs (beaten)
- 2/3 cups softened butter
- 1/2 cup all purpose flour
- 1 cup chopped pecans

1. Preheat oven to 400 degrees F
- 1 pound(s) medium russet potatoes, peeled and sliced into 1/4-inch-thick half-moons
- 4 tablespoon(s) unsalted butter, melted, for potatoes
- Salt
- Freshly ground pepper
- 1 tablespoon(s) unsalted butter
- 3 clove(s) garlic, chopped
- 3 tablespoon(s) chopped fresh parsley leaves
- 1 ounce(s) pecorino cheese, grated (about 1/4 cup)

Christmas Potato Soup

1. Preheat oven to 425 degrees F
- 15 cloves garlic, peeled
- 1/2 tsp. olive oil
- 6 slices bacon
- 4 medium leeks, sliced
- 2 14-oz. cans reduced-sodium chicken broth
- 1-1/2 cups water
- 2 lb. round red potatoes, peeled and chopped
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- Water (optional)
- 1/2 cup dairy sour cream (optional)
- 1 recipe Toasted Stars (optional)
- Sautéed Red Onion and Snipped chives (optional)
Cream of Crab Soup

Put first 8 ingredients in a pot and cook until very hot
- 1 ½ quarts of whole milk
- 1 pint of heavy whipping cream
- 1 tablespoon chicken base
- ½ teaspoon black pepper
- ½ teaspoon dry mustard
- 1 tablespoon old bay
- 1 tablespoon garlic powder
- 1 tablespoon Worcestershire sauce
- 6 oz. butter – 1 ½ sticks
- Flour to thicken melted butter
- ¼ - ½ cup of Fairbanks Sherry
- ½ lbs. of Back fin Crabmeat
Twice-Baked Sweet Potatoes with Mallow Surprise

Preheat oven to 400 degrees F
- . 4 medium sweet potatoes, scrubbed
- . 1/2 cup heavy cream
- . 1/2 cup butter (1 stick), softened
- . 1/2 teaspoon pumpkin pie spice
- . 1/4 teaspoon salt
- . Freshly ground black pepper, to taste
- . 1 cup miniature marshmallows
- . 1/2 cup brown sugar
- . 1/2 cup pecans, chopped

In a mixing bowl, beat marshmallow crème, peanut butter and butter until smooth

- 1/4 C. creamy peanut butter
- 2 Tbs. butter or margarine -- melted
- 1 5 oz. can chow mein noodles
- 1 C. pastel M&M's
- Confectioners' sugar

Stir the soup, sour cream, black pepper, vegetables, 2/3 C
- 1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
- 1/3 C. sour cream
- 1/4 tsp. ground black pepper
- 1 bag (16 oz.) frozen vegetable combination (broccoli, cauliflower, carrots), thawed
- 1 can (2.8 oz,) French fried onions (1 1/3 C.)
- 1/2 C. shredded Swiss cheese
