Hala-kahiki (Pineapple) Hawaiian Turkey Stuffing

Several years ago I decided to do a "Nationwide Thanksgiving" for my family
- 1 20-oz. can crushed pineapple
- 1 sm. can pineapple rings
- 8 eggs
- 15 slices bread, remove crust & dice
- 2 C. sugar
- 1 1/2 C. butter

- Ingredients
- 1 large red bell pepper
- 4-5 fresh jalapeño peppers, red or green, stemmed and seeded
- 4 cloves garlic
- 1 large stalk celery
- 1 1/2 cups firmly packed fresh cilantro, including tender stems
- 3/4 cup firmly packed fresh basil
- 3/4 cup firmly packed fresh dill, including tender stems
- 1/4 cup red-wine vinegar
- 1 tablespoon ground coriander
- 1 teaspoon salt

1 In a heavy small saucepan combine 3/4 cup packed brown sugar, 1/4 cup water, and 1 teaspoon lemon juice

Brown Sugar Grilled Turkey Breast

Brown Sugar Grilled Turkey Breast is the perfect way to enjoy delicious turkey without having to cook a whole bird
- BROWN SUGAR RUB:
- 1 (4- to 6-pound) whole bone-in turkey breast, with skin, split into halves
- 4 quarts water
- 1/2 cup packed dark brown sugar
- 1/2 cup salt
- 3 cloves garlic, crushed
- 4 or 5 bay leaves
- Brown sugar rub
- 2 cups apple wood or hickory wood chips
- 1/4 cup dark brown sugar, packed
- 1 tablespoon each salt and chili powder
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons oregano
- 1 teaspoon each dry mustard and smoked paprika.
Fruit Pizza

Directions Combine crust ingredients well and bake in a 350 degree F oven for 12-15 minutes; or until golden
- Crust:
- 1/2 C. butter, softened
- 1/4 C. icing sugar
- 1 C. flour
- 1 tsp. vanilla
- Filling:
- 1 pkg. cream cheese, softened
- 1 tsp. vanilla
- 1/3 C. white sugar
- Topping:
- Any fruit (mandarin oranges, grapes, cherries, bananas, blueberries, strawberries, pineapple, etc.)
- Glaze:
- 1 C. clear juice (apple or pineapple)
- 1 Tbs. lemon juice
- 2 Tbs. cornstarch
- 1/2 C. sugar
Chocolate Chunk Cookies With Nutella

Position the oven racks in the upper and lower thirds of the oven; preheat to 375 degrees
- 2 1/3 cups flour (level off in a measuring cup)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 8 tablespoons (1 stick) unsalted butter, at room temperature
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/4 cup unsweetened or regular Nutella (may substitute hazelnut paste; see headnote)
- 2 large eggs, at room temperature
- Scrapings from 1 split vanilla bean (may substitute 1 teaspoon vanilla extract)
- 3 cups (12 ounces) bittersweet chocolate (preferably 60 to 66 percent cacao content), coarsely chopped into 1/4-inch pieces or larger
- 1/2 cup coarsely chopped walnuts, pecans or hazelnuts (optional)
Overnight Caramel French Toast

- Ingredients
- 1 C. packed brown sugar
- 1/2 C. butter
- 2 Tbs. light corn syrup
- 12 slices white or whole wheat bread
- 1/4 C. sugar
- 1 tsp. Cinnamon; divided
- 6 Eggs, beaten
- 1 1/2 C. Milk
- 1 tsp. Vanilla
Honey-Spiced Carrots

Directions In a medium-size saucepan, bring the water and salt to a boil over high heat
- 4 C. of cold water
- 1/4 tsp. salt
- 1 1/2 lb. carrots, peeled and cut into 1 1/2-inch sticks
- 1 Tbs. unsalted butter or margarine 1/4 C. honey
- 1 tsp. sugar
- 1/2 tsp. ground allspice
- 1/4 tsp. black pepper
- 1/8 tsp. cinnamon
Fruit Salad with Strawberry Dressing

Directions Make dressing by taking about 1/2 C

- Ingredients
- 1 C. blueberries
- 1 C. fresh peaches, sliced
- 1 C. mandarin oranges, drained
- 1 C. fresh raspberries
- strawberries (see below)
- 1 pint strawberries, stemmed and halved, divided
- 1 tsp. honey
- 1 C. low fat sour cream
- 1 tsp. minced fresh mint (any type)

- 2 1/2 C. flour
- 1 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 1/4 C. sugar
- 3/4 C. butter
- 1/2 C. eggnog
- 1 tsp. vanilla
- 2 egg yolks
- 1 Tbs. nutmeg
