- Ingredients:
- 8 ounces German sweet chocolate, broken up
- 3/4 cup chopped pecans
- 1/4 cup flour
- 1/4 teaspoon double-acting baking powder
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 tablespoon unsalted butter
- 2 large eggs
- 3/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1 batch chocolate glaze recipe
Swiss Corn Bake Cups Recipe

Preheat oven to 375 degrees F
- 3-1/2 cups cut fresh corn kernels or one 16-ounce package frozen whole kernel corn
- 1/4 cup finely chopped onion
- 2 eggs
- 2 5-ounce cans evaporated milk (1-1/3 cups)
- 1/2 teaspoon garlic salt
- 1/4 teaspoon ground black pepper
- 1 cup shredded process Swiss or Gruyere cheese (4 ounces)

- 3 North Carolina sweet potatoes (approximately 1 1/2 pounds), unpeeled
- 1/4 cup extra-virgin olive oil
- 1 tablespoon finely chopped fresh rosemary
- 2 cloves garlic, minced
- 1/2 teaspoon ground coriander
- 1 teaspoon sea salt
- 1/8 teaspoon ground cayenne pepper

- 1/4C.1/4 C. sugar
- 1/2tsp.1/2 tsp. vanilla

Mexican Chicken Tortilla Soup

Heat the oil in large stockpot over medium high heat
- 2 teaspoons olive oil
- 1 lb boneless skinless chicken breast, cut into 1 in. pieces
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 minced chipotle chiles in adobo (7 oz. can) or 1 (4 ounce) can green chilies
- 1 (8 ounce) can diced tomatoes with green chilies
- 2 (14 1/2 ounce) cans reduced-sodium chicken broth or 2 (14 1/2 ounce) cans water
- 1 cup frozen corn
- 1/2 cup choppen fresh cilantro
- 4 cups baked corn tortilla chips

- 1/4 C. orange juice
- 1/4 C. honey
- 2 Tbs. extra virgin olive oil
- 2 tsp. Dijon mustard
