Smoky Sweet Glazed Carrots

These are the best carrots I have ever made!!!!
- 1 lb carrots (not baby carrots)
- 1 TBL butter
- 1 TBL EVOO
- 2 TBL Vegetable or Chicken broth
- 2 TBL maple syrup
- 2 tsp sweet paprika or hot smoked paprika - could also substitute 1 tsp dark chili powder

5-Minute Eggnog Pie

In large mixing bowl, use a whisk to mix eggnog, pumpkin pie spice, and vanilla pudding mix
- 2 small boxes instant vanilla pudding
- 4 C. eggnog
- 2 Tbs. pumpkin pie spice
- 1 8 oz. tub Cool Whip, divided
- 1 deep dish or 2 regular graham cracker pie c

directions 1. Roast fresh sweet peppers and fresh chili pepper according to the directions below
- 2 red sweet peppers or one 7-oz. jar roasted red sweet peppers, drainedsee savings
- 1 fresh red chili pepper or 1 to 2 tsp. bottled chopped red jalapeno peppersee savings
- 8 oz.soft goat cheese or cream cheese, cut up
- 2 Tbsp.olive oil or cooking oilsee savings
