Curried Turkey Salad

Serve this salad over lettuce or use as sandwich filling
- 3 * 3 cups cooked turkey, chopped
- 1/2 * 1/2 cup pecan halves
- 2 * 2 celery stalks, chopped
- 1 1/2 * 1 1/2 cups red grapes, halved
- 3 * 3 green onions, chopped
- 1/2 * 1/2 cup chopped red apple
- 2 * 2 egg yolks
- 4 * 4 basil leaves
- 1 * 1 cup vegetable oil
- 1/2 * 1/2 cup heavy cream
- 1 * 1 tablespoon fresh lemon juice
- 1/2 * 1/2 cup mango chutney
- 1 * 1 clove garlic, minced
- 1 * 1 tablespoon curry powder
- 1/2 * 1/2 teaspoon salt
- 1/8 * 1/8 teaspoon fresh ginger, chopped
Simple Arugala and Blueberry Salad

Toss all ingredients in salad bowl and serve
- 3 cups Arugala
- 1 cup blueberries
- 1/4 cup toasted, unsalted hazelnuts
- 1 T olive oil
- salt and pepper to taste
White Chicken Enchiladas

1. Preheat oven to 350 degrees
- 10 soft taco shells
- 2 cups cooked, shredded chicken
- 2 cups shredded Monterey Jack cheese ( I like the Kraft Tex Mex)
- 3 Tbsp. butter
- 3 Tbsp. flour
- 2 cups chicken broth
- 1 cup sour cream ( I use Greek yogurt)
- 1 (4 oz) can diced green chillies (these are not hot)
Mimi's Bread Pudding and Whiskey Sauce

Instructions Fill a 9"x 9"x 2-½" baking pan with the bread cubes and sprinkle the raisins on top

Prosciutto & Parmesan Stuffed Mushrooms

Put a rack in the middle oven and preheat oven to 400F
- 24 Large (1 1/2 to 2 inch wide) mushrooms
- 4 tablespoons olive oil
- 1 large garlic clove, minced
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped prosciutto (3 oz)
- 1/4 cup fine dry bread crumbs
- 3 tablespoons minced fresh flat-leaf parsley
- 3/4 cup finely grated parmigiano- reggiano
- 1 large egg, lightly beaten
