Clean mushrooms by soaking in hot salted water (1 1/2 t salt) to cover for 5 mins
- 1 1/4 lbs fresh button mushrooms
- white vinegar
- hot water
- 1 1/2 T salt plus 2 t
- 2 t peppercorns
- 1/4 C olive oil
- 2 t mace
- 2 large cloves of garlic, quartered
Spagetti Casserole

Preheat oven to 350 ̊. Heat non-stick skillet over med-high heat
- 1 lb lean ground beef
- 1 lb thin spaghetti
- 3 eggs, beaten
- 1 c grated Parmesan cheese
- 1 ⁄2 t garlic salt
- 1 ⁄2 stick butter, sliced
- 16 oz small curd cottage cheese
- 26 oz jar pasta sauce
- 2 c shredded Mozzarella cheese
Lasagna Bechamel

Preheat the oven to 400 degrees F
- Meat Sauce Layer:
- 1 slice bacon, chopped
- 1/2 onion, finely chopped
- 1 carrot, gratedKosher salt and freshly ground black pepper
- 4 cloves garlic, minced
- 1 / 2 pound ground beef
- 1/4 cup red wine
- 1 (20-ounce) jar prepared marinara sauce
- 1/4 teaspoon ground cinnamon
- salt and pepper
- Bechamel Layer:
- 4 cups milk
- 3 tablespoons butter
- 1/3 cup flour
- Pinch ground nutmeg
- 1/2 teaspoon granulated garlic
- Kosher salt and freshly ground black pepper
- Ricotta Layer:
- 2 cups (4 percent milkfat) cottage cheese or ricotta
- 1 egg
- 1/4 cup grated Parmesan
- Kosher salt and freshly ground black pepper
- Vegetable cooking spray
- 9 sheets boil-free lasagna noodles
- 3 cups total grated mozzarella
Schlemmertopf Stuffed Peppers

- 4 large green or red peppers
- 1/2 pound ground beef
- salt
- pepper
- nutmeg
- 6 tablespoons chopped onions
- 4 tablespoons chopped bacon
- 2 tablespoons parsley, minced

- 1/4 cup cooked rice

- 6 oz. cream cheese, softened
- 1 cup butter, softened
- 1 T. vanilla
- 1 (2 Lb) pkg. powdered sugar
- 2/3 cup milk
- 4 large eggs, lightly beaten
- 2 1/2 cups all purpose flour
- 1 t. baking powder
- 1/2 t. salt
- 2/3 c. water, room temp
Sweet Potatoes with Brown Sugar and Marshmallows

- 4 sweet potatoes or yams, scrubbed and dried and baked
- 2/3 cup packed golden brown sugar
- 1/3 cup milk
- 1/3 cup buttermilk
- 1/4 t. salt
- 4 T. butter
- fresh black pepper to taste
- 1/2 cup mini marshmallows
Mandarin Oranges with Sabayon Sauce

- Sabayon Sauce:
- 2 (15-ounce) cans mandarin oranges, drained
- 2 tablespoons brown sugar
- 2 egg yolks
- 3 tablespoons sugar
- 2 tablespoons sweetened wine, such as marsala
- 1 tablespoon sour cream

- 1 bottle TJ's Sesame Soy Ginger Vinaigrette

Pasta Mama (spagetti with eggs)

Prepare pasta according to package directions (or use any kind of leftover pasta)
- 5 ounces pasta, dry or fresh (like fettuccini or spaghetti)
- 2 eggs, beaten
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley (optional)
- 1 tablespoon olive oil (or melted butter)
- 1 tablespoon hot water
- 1 tablespoon grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground oregano
- 1/4 teaspoon seasoning salt
- 1/4 teaspoon onion powder
